河粉蒸雞
材料:
冰鮮雞半隻
河粉1個
辣椒仔1隻(切粒)
薑3片
酸梅1粒
芫荽碎
處理:
1. 河粉,清水浸20分鐘。
2. 雞,加入粗鹽1湯匙,乸5分鐘,去除雪味、腥味,及加入少許鹹味。
3. 雞,除去內臟及脂肪,清水沖洗乾淨,擎乾水,廚紙索乾,斬件。
4. 雞,加入調味料:
a. 黃豆醬1湯匙
b. 酸梅
c. 辣椒粒
d. 薑片
e. 糖1茶匙
f. 生抽半湯匙
壓爛酸梅,撈勻,醃2分鐘。
5. 河粉已浸好,清水沖洗乾淨,揸乾水,放碟上。
6. 加入半茶匙生粉在雞件上,撈勻,排好在河粉上。
烹調:
1. 大火煲滾一鑊水。
2. 大火蒸雞25分鐘。
3. 完成。
4. 灑上芫荽碎。
5. 可享用。
Steamed chicken with rice noodles
Ingredients:
Frozen chicken half No.
Rice noodles 1 No.
Chili 1 No. (Dice in cubes)
Ginger 3 slices
Pickled plum 1 No.
Coriander cubes
Preparation:
1. Rice noodles, soak in tap water for 20 minutes.
2. Chicken, add in 1 tbsp of cooking salt, season for 5 minutes. Remove unpleasant smells and add some salty tastes to it.
3. Chicken, remove intestines and fat. Rinse thoroughly. Drain. Dry with kitchen towels. Cut in pieces.
4. Chicken, add seasoning:
a. Soybean sauce 1 tbsp
b. Pickled plum
c. Chili cubes
d. Ginger slices
e. Sugar 1 tsp
f. Light soya sauce 0.5 tbsp
Squash the plum, mix well. Season for 2 minutes.
5. Rice noodles have been soaked well, rinse thoroughly. Squeeze them. Put on plate.
6. Add in 0.5 tsp of tapioca starch in the chicken, mix well. Put on top of rice noodles in rows.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the chicken at high flame for 25 minutes.
3. Complete.
4. Put coriander cubes on top.
5. Serve.
