紅豆沙湯圓(4人份量):
材料:
紅豆2膠杯
陳皮1角
冰糖適量
處理:
1. 紅豆用清水浸3分鐘,擎乾水,再用清水浸,放入冰格雪1晚。
2. 清水浸陳皮,放雪櫃雪1晚。
3. 紅豆已放冰格雪1晚。
4. 放2升水落煲,煲滾。
5. 結冰的紅豆,用清水解凍。
6. 陳皮洗乾淨。
7. 紅豆用慢水喉沖洗乾淨。
烹調:
1. 水已煲滾,放紅豆落煲。
2. 同時放陳皮。
3. 滾起後,收慢火,煲1小時,熄火。
4. 潷起紅豆,壓爛,再放入紅豆沙內。
5. 放適量冰糖入紅豆沙。
6. 煲滾1煲水,放湯圓,滾至湯圓浮起及透明就可以了。
7. 潷起紅豆沙落碗,再放入湯圓,完成。
Red bean sweet soup with glutinous rice balls (servings for 4):
Ingredients:
Red bean 2 measure cups
Dried orange peel 1 small piece
Rock sugar appropriate amount
Preparation:
1. Soak red bean with tap water for 3 minutes, hang dry. Then soak with tap water again, and put into freezer for 1 night.
2. Soak dried orange with tap water, put into refrigerator for 1 night.
3. Red bean has been put in freezer for 1 night.
4. Heat up 2L water in pot.
5. Defrost the freezed red bean with tap water.
6. Rinse the dried orange peel.
7. Rinse the red bean under water tap slowly.
Steps
1. Put red beans when water boils up.
2. Put dried orange peel at the same time.
3. Turn to low flame after boils up. Boil for 1 hour. Turn off fire.
4. Pick up the red bean and get it mashed. Then put it in the red bean soup again.
5. Put appropriate amount of rock sugar in the red bean soup.
6. Boil 1L water, put glutinous rice balls. Turn off fire when rice balls flow on water and becomes transparent.
7. Put red bean sweet soup into bowl, then the rice balls. Serve.
