They are glue, but it's not perfect since it's leather on rubber contact.

How does the stitching through the sole work? I get the how it is done but wonder how the thread holds up being on the ground surface of the lugs. Wouldn’t the stitch just wear away in a few steps?

They use super thick thread, and freaking screws to secure the sole. That thing is never coming off. You can see abused Nick's online that are still in great condition.

The stitching that makes contact with the ground is wearing off, yes. It is only for added security like the screws. For the boots to hold together the glue(?) is mainly doing the work.
