I'm Cajun, most homes at one time had cisterns, they were both collected rain water systems as well as gravity feed supply.... The water was drinkable and it kept for long periods of time, even in the severe heat and humidity of southern Louisiana. Look up cisterns, built of wood, barrel type, raise often built on a brick or cement / raised based about 4 or so feet off the ground.... they had an open top yet somehow they were not prone to bugs or debris... maybe a mesh covered top... I saw hundreds of them in my lifetime, many on family homesteads, plantations and country farmers homes...
