It’s a huge problem in the entrepreneur restaurant space where people who e never worked at or managed a restaurant, so they don’t understand 23% labor is making money, but 24% labor and up will start bleeding money. Your margins are SO SLIM. So cutting done on salaries or employees where you can is great, and not needing a head chef at each restaurant is great cause that would be the highest cost per location.
