I tried my idea of using coconut butter in place of oil and it worked really well. So I tried macadamia nut butter and it was even better! This improves the nutritional balance. Even "good " oils are refined foods stripped from their natural context. To use nut butter in place of oil just massage it in with your fingers. Go easy on the sugar which is also refined as well as addictive.

The canola oil would not hurt the taste, however canola oil is very toxic, I used to use it to make granola before I found about all the wonderful benefits of coconut oil, and the taste of coconut oil is so exciting=).

I like to add the raisins/cherries after I bake the granola so they don't get too dry and stay nice and chewy :)

I like to add the dried fruit after baking so that it stays softer. I am thinking that I might try massaging the oats with coconut butter (made by grinding whole, as in not de-fatted, dehydrated coconut flesh into a paste) in place of the oil. The heat of massaging and baking should release the oil into the granola giving a more balanced whole food than the oil alone.

If you get natural maple syrup (without additives, high fructose corn syrup, etc) it's a natural sweetener, and better than refined sugar or anything like that. A lot of people would probably use honey for this recipe instead, but maple syrup is vegan. Not the healthiest thing, but the consistency keeps the ingredients together somewhat and everyone wants some sweetness from their granola.

Coconut oil is -probably- (I'm guessing) healthier and has lots of good benefits. It also lends the recipe a wonderful coconut flavor, and I'm guessing that's the reason she's using it. I make granola bars with coconut oil in them, and they're just stupid good. Definitely try the coconut oil. I just can't quite picture the taste canola oil would give the recipe. I don't think it would be good.

One more observation... Tara didn't speak about portion size. The calories in this are astronomical if you treat it as a main dish. The answer is to look at granolas and such as "sprinkles" added on top of something less calorie dense. Think tablespoons, not cups. I have reversed my thinking: a bowl of fresh fruit with a little extra on top as opposed to a bowl of cereal with a little fruit on top.

nope. this saturated fat in fact is one of the kind which the body CAN proccess. it is not the same saturated fat like in Margarina. it is very common to think coconut oil is bad..but in fact is a good oil. there are better oils of course..but dont be confused...coconut oil is only ONE of the best.

It's not the best oil there is. I took Microbiology and we learned about which oils and good and bad for you. Coconut oil is not a winner.
