should I use honey instead of maple syrup?

Yes, you can substitute honey for maple syrup in these sweet potato brownies. However, keep in mind that honey is slightly sweeter and has a thicker texture. This will affect the flavor slightly, making the brownies a bit more caramel-like. To balance the sweetness, you might want to start with slightly less honey (about 1/2 cup to 2/3 cup), then taste the batter to see if it suits you before adding more. Otherwise, the substitution should work well without changing the baking time or texture much.

For sweet potato brownies, I have swapped almond butter with peanut butter a few times, and it works great if you do not mind a hint of peanut flavor. Cashew butter is another good option since it is milder and keeps the texture creamy. Sunflower seed butter is nice too, especially if you need something nut-free, but be ready for a slight color change! I have also tried tahini, which gives a unique nutty flavor, and coconut butter adds a light coconut taste. You have a few options to play with, depending on what you prefer.

Sweet Potato Brownies Recipe Ingredients 1 large sweet potato, peeled and boiled (about 1 cup mashed) 2 eggs 1 cup smooth unsweetened almond butter ⅔ cup pure maple syrup 2 tsp vanilla extract ⅔ cup unsweetened cocoa powder ½ tsp baking soda ½ tsp sea salt ½ tsp ground cinnamon 1 cup dark chocolate chips (plus extra for topping) Instructions Prepare Sweet Potato: Boil chunks of sweet potato for 15-20 minutes until very soft. Drain, cool slightly, and peel. Mash Sweet Potato: Mash until smooth, with no lumps. Combine Ingredients: In a bowl, mix mashed sweet potato, eggs, almond butter, maple syrup, and vanilla until well combined. Add Dry Ingredients: Sift in cocoa powder, then add baking soda, salt, and cinnamon. Stir until smooth. Add Chocolate Chips: Fold in chocolate chips. Prepare Pan: Pour batter into a parchment-lined 9-inch square pan. Smooth evenly. Top & Bake: Sprinkle extra chocolate chips on top. Bake at 350°F (175°C) for 25-30 minutes until edges pull away from parchment. Let it cool slightly, cut into squares, and enjoy!
