This was very helpful! I liked it a lot. I worry what people think probably too much. I liked the comments you shared about that. I think that could be my biggest hold up in going in 100% right now. But I can do it! I had a quick question about choline. I’ve heard that it can be hard to get adequate amounts of this nutrient on a plant based diet. Especially during pregnancy. Is this true? Should that be supplemented during pregnancy or when not pregnant too?

Ah, choline-such an important nutrient, and yes, it’s worth discussing, especially for those on a plant-based diet. Choline is essential for brain health, liver function, and even building a healthy nervous system. During pregnancy, it plays a critical role in the baby's brain and spinal cord development. While plant-based sources of choline exist-like soybeans, broccoli, quinoa, peanuts, and even beans-it can still be a challenge to meet the recommended daily intake, especially the higher needs during pregnancy (450 mg/day). For many, this is where a thoughtful supplement like phosphatidylcholine can come in handy. It’s the preferred form to avoid potential TMAO production, which has been linked to some health concerns. I saw image of a large swine in the slaughter house at my job in 2009 and that changed everything. Visiting family back in 2011-2016, they ate at Ihop every month and I always ordered salad with italian dressing, french fries, oatmeal with fruit, grits with salt and pepper, toast and jelly, bagel with with jelly. Over these years I discovered it is best to prepare the most scrumptious vegan wfpb dish and unless anyone asks for the recipe, no reason to state the ingredients. I shockingly discovered that not one person that I knew before wanted to understand the changes I made and when I shared new information, they said stop it, most while mocking the changes. Even my father diagnosed with stage 2 Non Hodgkin's last June did not have any interest in changing lifestyle or diet and gave back the healthy cookbook and foods. It is really sad, the conditioning of humanity.
