Ian, If a cookbook says "Peppers" with no qualifier on type, it means Bell Peppers. The spicy green "peppers" are actually chili peppers, but tend to just be refered to as chilis in cookbooks.

@@BlooCollaGal Sure but that's like saying all squares are rectangles. You're not wrong but you're gonna look like an idiot if your boss told you to bring a rectangle cut of paper and you show up with origami squares. It is better to refer to bell peppers as either bells or sweet peppers. Calling them chilis, while not wrong, is incredibly misleading.

Some chilis would be fire as fuck in this recipe as well As long as you're cool with heat, most green peppers can be used pretty interchangeably without affecting the recipe too much (imo)

I mean, he didn't realized it in previous videos, but I hope he did this time. As an addendum, I say that reading a recipe should be mandatory even _before_ shopping for ingredients. That way you can see how they're gonna be used and then you'll be able to more accurately figure out what you should get rather than guessing.

Personally, I re-write a recipe in my own words and may re-order it if it's like this one. Otherwise I have a tendency to skim it like Ian.

Yeah, some recipes get too long, boring and somehow too vague and too technical at the same time. Luckily most of the cookbooks I own keep it simple enough so I dont have to, but I have written a recipe on pancakes that has 2 steps. No need for more, really.

Raw pork in italian sausage contains bacteria that is killed when cooked in order to make it safe to eat, so him touching ingredients that will never get above 165 degrees with hands covered in that bacteria is pretty bad

@Don Clark both pasta sauce and pizza sauce are made differently with different amounts of seasonings and stuff inside them Pasta sauce would taste strong in a pizza and imbalance the flavor (i know this because ive tried it in pizza) but ad a dipping sauce its not half bad

The seeds in a green bell pepper are just bitter - you don't want 'em. But in hot peppers, the seeds make a lot more heat! Great video, Ian! ^_^

Actually, its the pith/ribs of the pepper that makes it spicy, not the seeds! Not sure where that myth came form, to be honest.

It's fucking sad that so many people are like aliens in a kitchen. Just do it, you learn every time and it doesn't take long before you get way more comfortable. It's cheaper, healthier, actually fun and you learn valuable life skills.

Ian oh no. Draining grease into the sink is gonna clog your pipes. Not obvious for beginner cooks (I've made the same mistake too) but "drain" doesn't mean pour it in the drain. When you're draining meat like ground beef or sausage, set a colander or strainer on top of the styrofoam dish thing it's packaged on and let the grease drain into that. Then later when it's solidified you can just throw the whole thing away. If there's no styrofoam like when you're cooking bacon then you can drain into a glass container lined with paper towels, throw those away when it's solid, and then wash out the glass with dish soap.

(Ian, you don't eat bell pepper seeds. Cut a circle in the pepper from the top around the stem/core, and you can pull the core and seeds out easily.)

The seeds are actually where all the spicy comes from. They really don't taste good, they're very bitter and spicy. People usually remove most of them when cooking, I've never seen someone leave them in unless they've never cooked before.

Another great food video right before lunch. You clever man. To help with future videos, when recipes say green (or red/yellow) peppers, they mean bell peppers, the kind you correctly bought. All other peppers have specific names in recipes.

i've seen a lot of recipes call for "chilis", without a specific one named. which is odd because different varieties of chili peppers have different flavor profiles and heat which will dramatically change the taste of the dish. but yeah, if it doesn't specify chilis it means bell peppers (or capsicum if you're one of those Queen's English people who likes their foods to have gross sounding names).

As someone who has been cooking my entire life, I can say with absolute certainty that there is no room for improvement. You have mastered the culinary arts in every sense. Gordan Ramsey can only hope to have half of the skill you have displayed in this video. Congrats on the trend!

Couple things: 1: I do not recommend pouring grease from meat down the drain. If there is a liquid from meat, it's probably grease. Drain it through a colander onto some paper towel on a plate or large pan. I'd recommend doing this in the sink though, it won't be as bad if a little bit gets in the sink. It matters when more than a teaspoon goes down the drain. 2: A baguette actually wouldn't be bad for a dipping side honestly. They are surprisingly versatile for those purposes. 3: Seriously don't try to save dropped food. I'm no germophobe, but it doesn't take much for the one really bad thing to get in and make you really sick. Bacteria doubles every 20 mins at room temperature, exponential etc. The microwaving probably killed it, but I wouldn't recommend taking the chance. 4: Consider getting a few of these items if you don't have them already: Colander, dry measuring cups, pans with lids (Anything from casserole pans to cake pans, even if it's plastic, it can be good for preservation) and an apron. Also, avoid hot sugar. Those are nasty burns you DO NOT want! (Just recovered from one at work a month ago) 5: Whenever you do things like break walnuts, graham crackers, Oreos, etc. Put them in a plastic bag first. Makes a lot less mess. I don't intend to sound condescending or anything, but if you are interested in making foods power to you man! As a baker, I've learned a lot of small things for home and professional food creation. You're doing fairly good overall for someone who clearly is out of their element. (Hard boiled egg is just an egg in boiling water for over 10 minutes. Much easier to make than a soft boiled one I gotta say). I look forward to what you create and how you improve over time!
