Professional Star Wars geek here. Looking only at the movies and series like The Clone Wars, 30+ does seem like way too much but when you look into the era of the Old Republic where the Sith had a full blown empire going (and I mean they were their empire, not simply 2-3 sith at the top), there were quite a lot of masters with crazy power levels. Emperor Vitiate for example was known for having so much dark power that he could not contain himself in a regular body anymore and somewhat ascended to a higher plane of existence. Force choking a few dozen people is basically nothing compared to his abilities like controlling his subordinates as if they were possesed by him in real time while being light years away (he had to get new subordinates for this from time to time because his presence severely damaged them over time). So the Star Wars universe really holds up to Qui Gon Jinn's quote "There is always a bigger fish"

You can definitely choke multiple targets at once. The reason it's not employed as an OP move as such is pretty much the same reason why it's not used constantly during a one on one battle; a sufficiently able force use can counter it's effects. It won't hold for much longer if the targetis fighting it. To use it on multiple force users is also bad because it can leave you open. If one or more manage to break it they can attack you while you're concentrating on maintaing it. The reason you don't see it employed often against multiple non force sensitive users is because there are other force techniques that are more suitable for dealing with a larger number of enemies more effectively. It works best as an intimate technique which can be used for dispatching enemies quickly or torturing them.
