I took to increasing the yolk/sugar/egg mix and the whipped cream by 50% for when I invariably use too much, but this stuff is great. Other note if you're using packet gelitine because you don't have access to the sheets, try about 1/2 packets, it tends to work a bit better, mix with a small amount of warm water before mixing in.

I'm making it right now! It's in the fridge with the white cholocate on it. The cocoa sponge was a bit sticky, and my first try with the egg yolk and the milk was a mess, but it already tastes wonderfull! Thanks for the great video!

@@treat_confectionery3 I honestly hate the way HidaMari just dumps the milk into the egg. You have slowly pour it in while mixing nonstop to *temper* the eggs, otherwise it'll scramble in the milk. Do NOT do what she does, it is careless.

I made this yesterday and it was too much work. But worth it. It came really well. I used a 15 cm pan. and the layers were clear like in the video. It's still chilling in the fridge. I tried the left over cocoa sponge it was delicious. I can eat it by itself. Next time when there is a potluck I am going to make this. Thank you so much Hida.

I made this for the 2nd time. It was not that hard this time. Too much to clean was the only issue. The 2nd time I used powdered gelatin and it came really well. All my family loved it.

Any video where chocolate gets chopped is a 10/10 great video, it makes such a good sound
Looks good but I would turn the layers around so the white layer is on top, this would help the chocolate topping contrast against a white background.

I’m not quite understanding how there’s “similar but opposite” energy? They’re both Japanese and ASMR-themed channels, if that’s what you’re trying to link up.

@@churlish_hoecake Kinda? It's more that they both make these amazing things and they make everything look so EASY even when it's very time consuming and requires a huge amount of skill. That's why they're 'similar'. But they're also opposite, because the HidaMari channel seems much calmer and structured whereas the Kiwami channel has a sense of chaos and unpredictability to it.

You also could bake the cake in a regular round cake pan, trim the top flat, cut it into three thin layers, and alternate layers of cake and mousse in the assembly, so you don't waste so much of the cake.
