Teriyaki sauce First boil, then simmer on low heat for about 45min-1hr 32oz Mirin pour into large pan Fire on. Wait until Mirin starts to boil [Other recipes can use sake and Mirin one by one. Today we are only using Mirin.] Once mirin/sake is boiling turn to slow heat & use torch to burn off alcohol. Now add 32oz Soy Sauce Wait until mixture boils, stirring occasionally. Add 24oz sugar Add 8oz honey Stir frequently to avoid burning sugars Add about 2 handfuls of sliced ginger Add about 1 handful of sliced garlic Slowly simmer and reduce for about 35-45mins keep a watchful eye and continue to stir frequently. When bubbles rise slow the heat and let bubbles subside repeat process until liquid becomes thicker, strain liquid into a bowl and let it cool down to thicken up.

Video demonstration is fantastic. However is there a written typed recipe with ingredients and step by step for demonstration that can be added as it makes this this less stressful when sharing with my food groups who will ask always for exact ingredients, to match the video. I don't really get why people complain about the camera. I can see where you are coming from when he talks alot, but he's keeping the viewer engaged and on the same wave-length as Hiro-san while he is cooking (he's walking us through the process). Hiro explains stuff, but like any chef he gets focused and cooks so the camera man will chime in and just clarify what he is currently doing (I cook in my spare time as well so I understand how chefs can go quiet). In any case I think that these videos are very informative and fun to watch! Keep up the great work Hiro-san and camera man!!!

Hiro is a really great chef, but the *teenage drunk chick with an old iphone* quality of camera work cheapens the look and feel of his special skills. No microphone, no wide angle lens, single angle running shots with few to no intuitive edits made at all to make the production flow or have any hint of professional appearance. Cameraman doesn't even use a white balance or cut back the blinding ISO brightness/back the f value up to cancel the stupid glowing whites and raging unnatural gamma/blue hues off the fore and background.

Just a little insight, the reduced sauce will remain runny immediately after until it cools. After cooling, the sauce will take on a more syrupy viscosity. The hot teriyaki sauce molecules are moving must faster and farther apart due to the heat resulting in a runny consistency. Love the channel, keep it up!

I've been making teryaki sauce almost exactly like this for several years now since l first watched the video. Only thing l do differently is l like less sugar and more honey, and l add a small amount of cayenne pepper to give it a slight kick. But it thickens up so beautifully as it cools and l have used it on chicken, steak, vegetables, salmon, and tuna with excellent results.

If you don't like his style of filming, you don't have to watch. Hiro has a personal channel that him and his friends record called Hiro Day Off if you don't like the cameraman, but please don't leave hate here for the camera guy - as it is unwarranted and nobody cares. Muzamil Ahmed S Actually you can't. Mirin provides kinda sweet, rice vinegar is sour. For instead Mirin, you can use some alcohols, which for cooking like Sake, wines, shaoxing wine.

Many mirins stocked in US grocery stores (like Kikkoman's) don't have alcohol, so that can be a factor, too.

Showing him wash his hands or clean the cutting board is of a different matter (that is, of prime importance in exemplary hygienic behaviour) as opposed to showing him slice a bowl of garlic from 4:15 to 5:44.

Konnichiwa Hiroyuki Terada sama! Thank you for all your hard work and for sharing your recipes! I've recently discovered your KZbin channels and have enjoyed binge watching the videos you've put out. I can't tell you how much I enjoy watching you teach the world all the culinary secrets you've developed over your lifetime from the comfort of my own home. It took me some time to figure out why you do the things that you do; but, when I really thought about it, you're investing in yourself by trading a portion of your livelihood (chef secrets) in order to reach an infinite number of audience members that will, in the end, repay you manyfold than what you would have ever achieved in a single kitchen. I'm really happy that you've gone above and beyond some of the older generation (no offense to your age) and have been able to embrace technology and manipulate it to your advantage to keep yourself competitive and ahead of the game! You're a true inspiration and I look forward to all your future videos! PS - Regarding what to do with the strained ginger/garlic bits from your teriyaki sauce, personally, I saved the bits and drip drained all the liquid. Then I put it into a food processor until it turned into a paste and used it as part of a marinade for Korean bulgogi and kalbi. Both recipes call for a certain amount of garlic, ginger, sweetness, and soy sauce so this turned out to be a perfect precursor! Keep up the great work and keep doing what you do!

Excellent. This is an awesome do it yourself help video! The only thing I would substitute is, rather than using refined processed sugar I would use a lesser amount of Raw Sugar. Thank You Chef Hiro for sharing!

Hi there. Thanks for this recipe. I never did care for teriyaki sauce, but my wife does... so I made it for her. Next thing I know, I like it now too. This is so much better than the store bought stuff.
