My dad is a southern fisherman from Houston and Seattle, and is published. We'd never be caught dead with store bought tartar sauce, cocktail sauce or mayo. Cornmeal in the tempura batter and lemons (or limes), dill weed and onions are a must in tartar sauce... And my mom was raised in Japan. 🙏

My husband and I have been enjoying every single thing on this channel for quite a while now. The only seafood I don't care for is lobster, and yet I sat through the entire lobster video because I knew he would make it look good. Lol I've always "liked" the videos, never really commented. But I am amazed that you don't have more fans. Just wanted to finally spent a few moments to give appreciation for your amazing talents. Too many "chefs" on KZbin are rather obnoxious to watch. I know they're trying to entertain, but I truly admire the subtleties of this channel that concentrates on the rewards, but isn't boring to sit through. It's a middle ground of perfection in my eyes. Lol We live in New Orleans, but we have decided we will do a trip out there in the next year just to admire in person. The websites menu looks amazing! I had no desire ever, ever, to go to Florida, but I think it'll be worth the try. Lol Anyways, just had to finally give a compliment. Thanks.

If you like shrimp you might like lobster if it's grilled over charcoal. The lobster tail has to be cut so it's kind of stringy before grilling. After that, you just add some garlic butter. I've only had it done once this way when I was in Cancun. That is still the best lobster I've ever eaten.

Insanely skilled chef, beautiful dishes and good synergy between the chef and the camera guy (honestly, commentary from behind the camera is usually very annoying with other videos, but you two have great synergy together). really enjoy your stuff.

We have a micro-brewery and pub here in Santa Cruz, California, named Seabright Brewery (their special Resolution Red ale is spectacular). About 20 years ago they started making Salmon Fish n Chips with local salmon caught about 3-5 miles right off our coast. They have a regular tartar sauce along with a wasabi soy sauce and a ginger something sauce. It's served with fresh local baked bread from one of our superb local bakeries and a basic fresh salad, also with everything local. It used to be only seasonal so if you fancied a plate you pretty much had to be waiting for the doors to open for lunch - don't even think about getting any for dinner. Now they have it year round with farm salmon which is still good but nowhere near the richness of the fresh pink local wild salmon all fed up with the ridiculously abundant krill available in the cold waters of the Monterey Submarine Canyon that runs in the middle of the bay. This reminded me of that dish.

As a British person, glad to see that the fish was eaten by hand. One thing that we do in Britain a lot is that we use the excess batter that fell off the fish when frying on top of the chips on the plate to add some texture, not sure if this would work with tempura batter but, it looks amazing!
It is so satisfying watching his knife skills. Post some more knife videos of him cutting up stuff!

A great dish, fish and chips are a favourite here in the UK and I love beer batter, it's so much better than normal batter. I've never tried tempura beer batter but will be doing so in the near future. Many thanks for this video, ATB from the UK.

Love his videos & really respect the years of practice it takes for perfect knife skills . The fish looked amazing. Thought the chips needed a little help. Blanch the fries/ chips in lower temp oil 250-275 for few mins. Drain off oil/ cool. Then fry at 350. Will be much better than dropping in 350 degree oil only.

Awesome as always Charlie!! Quick tip from an english chef! fry your chips on a slightly lower temperature then fry them again for a few minutes on a higher temperature! :) Thats what a lot of fish and chip shops do here !

Having watched, and subscribing, to this channel way back when it was still NoVe for the sushi videos, I must say that I thoroughly enjoy watching Hiro make other dishes than sushi. I think I heard Hiro say that this was going to be like a fish and chips type of deal. That being said, even though this is the diaries of a sushi chef, I think it would be interesting to see Hiro make other foods he enjoys, be it with or without an Asian twist. I think that since the channel is about him, that it shouldn't hurt to move away from just Asian cuisine and into other things Hiro enjoys cooking, if there are any others. Just food for thought if you guys are ever trying to think of what you can do for a video next. I'd be willing to bet Hiro has some interesting twist on other cuisines.
