Roasted chicken is my all time favorite food! For my favorite "THE VERY BEST WAY" to make a roasted chicken is to spatchcock it, debone it, dry it off. If youve got the time place into the fridge uncovered for up to 24 hrs but it needs at least 2 hours to dry off/out. place chicken into a cold pan skin side down. Stretch it out so that all of the skin is making contact with the skillet/pan. Roast it in the oven or cook on the stove for about 30 to 40mins on medium/medium low. i prefer the stovetop. At this point it should be about 75 to 80% done. Flip over, add some butter to the cooked side thats facing up, with some minced garlic and a couple sprigs of thyme and cook for another 10 to 15mins to cook chicken through. You will have the best, most crispy skin chicken you have ever had. ABSOLUTELY THE BEST "roasted" chicken ive ever had, and ive had thousands of em, it is my favorite food and i make em at least twice a week and have for 25 years. Try it, you can thank me later.

By leaving the skin on you use the fat that renders from the skin to crisp the skin and seal in the flavor. I use my air fryer for foods like this all the time. Now I'm hungry watching you guys! Happy Holidays!

The juices flowing out are pink. Also i noticed you quickly panned to different shots once the exposed dark meat was shown and its easy to see that the dark meat is slightly under by a few minutes. Juices from chicken should never be pink/red. Also the meat where the legs were separated were pink and blood was flowing out once he cut the dark meat off. Breasts done beautifully, dark meat needed another 3to4minutes.

I have to agree...it's very hard to beat a Costco Rotisserie Chicken for $4.99. They basically sell them cooked for .99 cents a pound. Basted in their own juices or add to the cavity quartered oranges, vegetables etc. to baste the bird with other flavors. So tender, hard to pass up a rotisserie prepared chicken. Merry Christmas to this channel and thank you for all of the Japanese cooking ideas. You should see my kitchen cabinets and refrigerator...stuffed with all of the many Japanese juices and sauces ! I'm still looking for Yuzu juice which will send me to an Asian market that's out of town one soon day.
