My mom was raised in Tachekawa and, with 5 kids to feed, grew up with Japanese food. I say, "We had Toshi's before you did!" - lol, wink wink. Love Hiro-San, friend, from Seattle. BTW, it's pronounced "gooeyduck", not G E O duck. They are raised here in Western Washington greater Puget Sound Basin and along the Washington and Oregon coastal waters and inlet beaches. As much as I love watching hiro make sushi, there's something fantastic about watching him make other dishes as well. Great video and this goes in my "to try at home" list! Side note, 8.5k away from half a million! I remember 10k subs, shifty camera quality and horrible audio! It's been so much fun seeing you guys develop! I look forward to more and more in the future!

I've tried both styles and I prefer Hiroshima style. I remember my favorite place in Hiroshima. I would order, "soba, niku, tama no ika to ebi". I'm so glad you finally made a video on okonomiyaki and elaborated on the two styles.

Question though, how does broth made with hondashi compare to ichiban dashi from scratch, with kombu and bonito, as far as the flavor is concerned? Do you have a preference?

A great recipe which I love. I have this at the Japanese Pavillion at our Heritage Days international cultural event in Edmonton. I have been going there every summer, for several years now. This is one of the first things I get. It comes with a combo platter. They have food, music, artwork and dancing, from many countries from around the world. I also see the Japanese drummers at this event. It is a lot of fun. Thanks for sharing another great recipe Chef Hiro.

Lol, Chef John on the Food Wishes channel always says stuff like that when he explains that the way he does something is not the way you have to do something. So if he's making a sauce and he says you could add some ingredient instead of one he used, he'll say "You are the boss of your sauce" And it always rhymes, which is why I said Charles Babbage.

You may not know, but Chef Hiro has actually broken the Guinness Book of World Records for his cutting carrots blind folded, and has gone up against Chef Ramsay from the UK - Chef Ramsay with open eyes, and Chef Hiro blind folded. Way fun!

I don't know if Hiro is licensed for that. You need a special license to prepare and serve fugu, as it is very dangerous.

I make this at home all the time, one of the things that is AMAZING in it is chopped pickled ginger. its one of the few things i've found that lets you cook with pickled ginger.

Loved Hiro-san's youtube stuff for years. Especially clean knife work. I trained as a chef in Japan, too. Nishiwaki city. Anyway, we use nagaimo or yamaimo in the batter also. Ika....mmmmm. If you dont have those, Hiro-san's way here is perfect. Raw egg yolk on top with katsuobushi, sarashinegi....kewpie.....benishouga... omg. Ha!

I've been home-making and tweaking okonomi-yaki for over 20 years, and I agree that yamaimo is a must. The batter is just there to keep the ingredients together, and should not "bake" up like a cake or donut, and the finished product should be a consistency that makes you think that it's undercooked. Also, using an actual rich dashi broth will add flavor and liquid to keep the consistency moist. That said, it still tastes great even with a heavy flour-based batter, but if you can get yamaimo, it's really sublime.

Just found this okonomiyaki (however you like) in a search. Nice take on the dish. I am familiar with the Nagasaki style and think this one presents better. Hiro is such a personable guy, I can watch for hours.

Hello again! The hardest part was to flip it over. Half a cabbage (15cm in diameter) gets you two large plates of okonomiyaki. And it's a consistent meal. 🙂
