Although I'm not one for chocolate cake that whip cream instruction is a godsend. My whipped cream always had issue holding after a night in the fridge on a spongecake if I wasn't doing a hard cream cheese frosting like for carrot cake.

Whats the fat content in the cream? In my country the highest you can get is 36% (very rarely), usually 32%.
