I missed you Dave! I've always watched you since 2009 as I'm eating my dinner at work that I made myself of course. I am a Keto guy & got myself back to my high school weight. I'd love to see your take on a low carb friendly meal. Much peace & much much love all the way from across the pond in the U.S.

So glad to hear from you again. You always have great ideas to use in the kitchen. I love cooking, and am always glad to find a new recipe or helpful kitchen tip. Thanks for this one...I also like to preserve fruit with vodka. Sometimes, I add red wine to cherries and let it sit in the fridge until I run out of wine and then I go to the jar of cherries and use the wine. Then I eat a few cherries...happy me!!!

I love vodka sauce for pasta. Also, dry sherry is good for cooking chicken, soups, and also for drinking. It's great to mix dry sherry and cream sherry half and half. So lovely. Please try it. I use Taylor brand, but you can choose Sheffield or Harvey's Bristol Creme sherry. Sheffield is less expensive, but Harvey's costs more. I prefer Taylor, as it is medium priced and delicious.

Dave these look amazing , i actually made Coconut extract, pineapple and glace cherries but i used Rum the havana club rum , i would love to see you make them i am sure you will love it

@@mucnagow2 I just got whole almonds took the brown skin off and poured vodka and shook the jars once a week and after about 3 months I found all the extracts ready to use.

This gives great ideas....never thought about making my own extracts. I just found your channel last week and made the simplified Thai curry recipe.....I've tried Thai curry before with a more complicated method, but this turned out the best of any I've ever made. My Dear One: Thank you! I plan on making some Anise Extract by using Vodka, Rum, and Brandy in three separate jars with 1/4 cup anise stars in the bottom of each jar... for use in my cookies... I'm hoping to make some springerles with this... A springerle is a German cookie mostly made at Christmas time. One either loves or hates them. What about lime and tequila for, I don't know, adult drinks like a margarita... Then apple or cherry skins and some cacao in brandy... 😋😄😋 I love the idea of vodka... vanilla beans after I scrape out the meat for baking...

Unfortunately, alcohol is required for making home made extracts, but then most commercially available extracts contain alcohol 👍

The alcohol evaporates when baking, frying etc.

Unless you have an allergy to alcohol, don't worry about baking or cooking with homemade extracts since the alcohol cooks off at 173 degrees Fahrenheit or about 79 degrees Celsius. It will add a negligible amount of alcohol to uncooked dishes however. But then most store bought extracts also contain alcohol, especially the ones that are not artificially flavored.

The flavor compounds are only soluble in alcohol. It's essential for it to work.
