I heard it works better if you break them up a bit. Here's another recipe: Heat the oven to 350°F. Use a hammer to gently tap the sides of each peach pit until it opens and you can extract the kernels. Roast the kernels on a silicone baking sheet for 10 minutes. Let the kernels cool for 10 minutes. Add the kernels and spiced rum to a blender. Pour the mixture into a jar, tighten the lid, and store it at room temperature for 3 months. Shake the jar every day or so to mix, then strain the kernel chunks from the extract after 3 months. Pour the extract into a clean jar. Because the flavor of almond extract can be strong, you should start with only 1/4 teaspoon per recipe.

countryrose763...Well, I did use almonds on my first attempt, and ....nothing...NO Almond extract...p.s. I still have that batch, I didn't throw it out, so I can double check to see if there was any improvement, but I don't expect any...

@@countryrose763 I have made Vanilla Extract, and it's true that you can use it as soon as 8 weeks, but the longer you leave it, the stronger the flavor...The difference with Vanilla Extract is that you are using the Vanilla Bean, which is the same ingredient that industrial manufacturers use. With Almond Extract --Bitter Almonds are used and most people do not have access to Bitter Almonds because they can be toxic.

@@HerHomesteadSkills I made almond extract the same time I made my vanilla. The vanilla is exceptional. The almond (with only almonds and vodka) never ever produced a fragrance or almond taste. After 2 years I threw it out. I am going to try again with your recipe. Thank you 🙏
