Possibly the greatest doughnuts ever…. This is the greatest dough! (Greatest showman anybody?!)…
I love donuts (or doughnuts, I’ll use both eh) and these are delightfully tasty. Wedged with jam (or jelly!) classic style sugar coated loaded doughnuts that are light, fluffy, crunchy and just in summary the best I have ever tasted - it’s the freshness that takes it to flavour town and I hope you want to go and visit! It takes a little time with the fresh dough being used, but boy it is worth it.

Ingredients list:
500g plain flour (plus extra for dusting)
75g sugar
Pinch salt
1 sachet, fast action yeast (approx. 7g)
110g butter
2 eggs
1tsp vanilla extract
300ml full fat milk
To fry
1.5l vegetable oil
To fill / coat
400g strawberry jam
100g caster sugar

Google are an American company, so they tend to spell things wrong. like flavor, color ect, which should be flavour, colour.

In Germany this kind of donut is a traditional snack for new year's eve, but you can buy them all over the year in almost every bakery here, sometimes even with alcoholic filling, especially on new years eve and on carnival

When I was 15 (in the US) my first job was at a bakery. I filled all the donuts with creme and jelly. There is a cool little contraption that you scoop the jelly or creme into. It has a big bowl on top and looks a little like an old fashioned kitchen scale, but with two metal prongs sticking out the front. You slide two donuts on at a time, push them both in (there was a little bit between them that got pushed inward when you pushed) and it would inject the jelly or creme directly into the donut.

the sachet of yeast comes in that weight ebcause its the eqquivalent of one fresh cube of yeast thats normally 25g or so the weight of said cube, so the dry yeast is 7g

Hey Barry, instead of all that cling wrap on a baking tray, you can buy actual covers for those trays. They are raised up quite a bit from the edge of the tray so they're perfect for proofing stuff like these lovely donuts.

Those Jelly Donuts are a staple in german Bakerys. In the Northern parts of Germany they are called "Berliner" in the more southern states, they are called "krapfen" and in Berlin they are called "pfannkuchen". Pfannkuchen actually translates to pancakes in english. If you ever pay Germany a visit, make sure to give our "Berliner" a try :)

They're popular in every supermarket in the UK as well, for stupidly low prices. Usually 10p each about 0,12€. I used to work at Sainsbury's in the UK and I was amazed to learn they are actually all baked fresh in store every morning.

They are in north and the midlands in the UK. You go into Greggs or Wrights and they have all manner of donuts!

I remember my nana's donuts she used to make lemon curd ones too as well as Chocolate ones but she also used to make her own homemade jam. Please make lemon curd ones you'll love them if you like a zesty taste :0)

nutella filled doughnut with crushed nuts sprinkeled on top and the half of the doughnut dipped in chocolate so you get that nice coating 😏😏😏😏

Let me teach you one of my great grandmother’s Krapfen/Berliner (filled donuts) secrets: depending on what you put inside you can fill them before you bake them. Here in Saarland (Germany) plum filling is the preferred filling (and hard to get Berliner with it at bakeries as it’s way more expensive than mixed berry jam). Plum jam/preserves can be baked and it even enhances the taste. So you make the yeast dough, let it rise, roll it out to about a thumb thick. You’ll need a slightly wider than average glass or a round cookie cutter. Make slight indented circles into one half of the dough with the glass (just to help you with the spacing!), put filling in the middle of the circles, fold over second half of dough and slightly press together IN BETWEEN the “filling hills”. Use the same glass as before to cut out the donuts. Let rise again and deep fry. Filling will be exactly in the middle, and evenly spread. You don’t push some of the fluffiness out of the fried donuts by making a hole in the side. And you’ll also get evenly sized and perfectly round donuts.

Jam-filled doughnuts-called sufganiyot in Hebrew, chremslach in Yiddish-are traditional Chanukah fare, since frying them in oil commemorates the Chanukah oil miracle.

The Dutch version is an « Oliebol ». We ate a lot these days because it’s tradition to bake and eat them on the 31st of December! You can have a plain « Oliebol » or the dough is filled with raisins and/oor applebits

Those look really tasty! Great recipe. I never made them myself, because luckily you can get them at almost any bakery in Germany. It's tradition to eat them at New Years Eve and during Carnival season in some regions of Germany.

When I was a kid my church would make doughnuts, except they used canned biscuit dough (American biscuits)...like Pillsbury Buttermilk Biscuits. They would deepfry them in a big pan on a portable cooktop right in the dining room. I miss that.

Thank you barry so much for this video. I grew up in Australia and a childhood memory on family trips was stopping on the side of the road at a doughnut caravan for a bag of hot jam doughnuts rolled in cinnamon sugar. SOOO GOOD! Since moving to New Zealand, there is no such thing. But sometimes that nostaliga kicks in. Now I can make them myself. Keep up your great work mate! :)

We sure do have the doughnut caravans with bags of hot doughnuts here in NZ, although they can be hard to find recently with lockdowns etc. If you can't find the caravans, then your closest bet would be a "jam wrap" from any fish and chip shop :) It's a slightly bigger rectangular doughnut, but it's the same dough, rolled in cinnamon sugar, and filled with jam. I call the kind of doughnut Barry made here 'fish and chip shop doughnuts', because that's where you're most likely to find the bready ones like these in NZ :) Or, of course, at most bakeries with cabinet food too.

The small Doughnut you have there would be in some places called a Doughnut Hole and At a Canadian Coffee Chain where I used to work Called Tim Horton's it was called a Timbit. Those little guys are just as wonderful as the big Doughnuts

Those look awesume... I used to make donuts like that when I was young - and mom had a specific "syringe" like device to inject the filling - works excellent! (for chunky fillings - the "syringe" nozzle is bigger) . Thanks! :)

Of course those donuts are awesome. Commercial donut stores use a chemical to make the dough rise faster. That is why your donuts taste so good. No chemicals. Also use a couple of chopsticks to turn the donuts in the oil.

I tried making donuts just YESTERDAY 😭 couldn't cook them before this morning and they are now flat as a pancake. Will be trying this out tomorrow!

I think its a southern thing. In stoke you go into Tescos, Asda or Morrisons and you can get fresh ones with raspberry, strawberry, chocolate and custard. Even lemon curd ones.

These donuts are super common in Finland, you can get them in pretty much any supermarket even though raspberry jam filling is the most traditional. And now I'm craving one...

Barry, hannuka is at the end of November this year (28th of November till 6th of December), you are a month early! Maybe do latkes as a hannuka special? Cause yes, jelly doughnuts like that are what you commonly eat for hannuka

In Norway these are normal and you find them in many grocery shops. I like them best with Vanilla custard. In Tromsø and Svalbard I think they celebrate with these when the sun is back each year.

A local bakery used to make fantastic fresh donuts like these every Saturday. Unfortunately the bakery is no longer there and supermarket donuts are nowhere near the same. I think I’m going to have to try this recipe.

Barry. Another great combo here in Australia is custard filled doughnut with chocolate top instead of the sugar coated jam filled variety.

Here in Minnesota, you can get filled doughnuts at any grocery store, bakery, and more than a few gas stations. I think it might be a cold-weather thing, something people like for comfort in a snowstorm and then eat folndly out of nostalgia during warmer months. Whatever the case, they're delightful.

Raspberry filled, frosted donuts (or Bismarcks here) are my favvvvorite! My mom loves lemon filled, powder sugared ones! Thankfully these are readily available at bakeries in the US (at least here in Wisconsin)

You have to try the frozen dairy cream donuts. You can get them at Iceland and our local B&M store sells them too. They full of jam and cream and covered in icing sugar. Plus being frozen you can get one out at a time so great for the waistline too. I always end up eating the full pack of fresh ones you can get at sainsburys etc.

Where I live, these are called "Berlinerbolle", not donuts. The shops here often have vanilla cream filling in them instead of jam, but also jam ones.

If you do a massive doughnut i would recommend you use a fire pit bowl with a gas stove to heat up the oil. that way u can make the doughnut as HUGE as you like. awesome video.

If you are ever up near the midlands, take a trip to a Birds Bakery in Derbyshire and have a jam donut! You won't regret it, they only sell as far from the factory as they can stay fresh.

Hanukah is on the way soon and bakeries around where I live in Israel already started selling those kinds of donuts. They are tradition.

I used to work in Sainsbury's bakery and put the jam in the doughnuts. Sometimes I used to put in double the jam so if you bought a particularly heavy bag of doughnuts in North Yorkshire, you're welcome :)
