If you find the texture to grainy (Even though that's the beauty of this recipe) Here's a tip: After cooking the nuts, separate the nuts and the liquid (don't get rid of the liquid!) and puree the nuts in a food processor until smooth while incorporating the liquid a little at a time. Same taste, different consistency. ;) ALSO: I thought I was the only one who paired Apples and Nutella. Glad to know that I am a little less weird. :')

WOW This is the first time I see homemade nutella being made like this! I thought you just had to put the hazelnuts in the food processor and process it like crazy until it turn creamy then add the coco and blend again the sh*t out of it. (My food processor died doing it just once) P.D. This is f-ing awesome!

I agree - I was shocked to see him boil the nuts - that dilutes the flavor. Well, everyone has their spin on things. I'll stick to the other way - toast nuts and blend until you get a smooth butter. I guess you can get rid of the hazelnut skin to make it smooth, but I like the toasty flavor the skin adds to it.

Try this: put your hazelnuts in the processor, then add the brown sugar til it's all creamy. add a little bit of cocoa powder and then dark chocolate. put some hazelnut milk in it and let cook for about 15 minutes. - 120 gr hazelnuts (with no skin) - 120 gr brown sugar (or less) - 20 gr cocoa powder - 140 gr dark chocolate - 200 gr hazelnut milk

Is the "dark chocolate" in your recipe a powder, or dark chocolate chips that get pureed in the blender? I'd love to try making a chocolate hazelnut spread that would taste smooth, rich, and chocolatey, but would have more cocoa and milk powder, and less sugar, compared to store-bought Nutella.

Someone may have already said this but using blacked Nuys (no skins) will make your final product smoother. Also, use a food processor and blend the nuts until they release their oils and it will turn smooth without needing extra liquid.

I only recently tried Nutella for the first time. I don't care for the hazelnut flavor and thought it would be too hazelnutty tasting. Boy, was I wrong! I only tried one of those little snack cups and it's a good thing because I could see it being addictive. Can you update the recipe to reflect the complete ingredient list - including hazelnuts and I believe you also mentioned almonds too.

ByronTalbott No vanilla used? Nutella has Vanillin which is artificial but I figure using real vanilla extract will enhance the flavor a bit? Still, thanks for the video, I will try it out and adjust to my taste accordingly.

Be careful, it sure is addicting! I bought a 35oz jar on Sam's Club to last me the summer and I've already ate 1/4 of it. I will definitely gain some belly fat but since I barely eat any sweets I say its worth it haha.

I'm thinking after toasting the nuts, let them cool and pulverize them in a high powered blender or coffee mill until a silky smooth powder. Then back in a pot for liquids and chocolate. That might resolve the graininess.

Hey, when blending the nuts, I recommend blending it in batches so it is easier to make it smother. :)

Great stuff! A couple of tips: you will get a better flavor result if you remove the hazelnut skins before you cook them because they contain bitter tannins. Also, you will get a better texture result if you conch it a bit (12 hours or so) in a wet mill, like Indian cooks do for dosa batter.

Apple + Nutella = the food of the Gods. Since apples are supposed to be nutritious, and "good for you", they provide a way to eat Nutella - which is basically just a candy bar in a jar, with little or no nutritional value - without so much guilt.

That induction stove top is love. I never had a thought for it when seeing it in your videos-except when wondering why you never use the 4 burner stovetop above your oven. And then I got to use my aunt's induction stovetop. Damn, was it amazing! Just made this recipe last night. Follow ingredients measurements exactly. Except the kosher salt. I only added one TB and the taste product was salty maybe a pinch of salt can still enhance flavor but 2 tb it's a little too much. I love the consistency and ingredients I'll definitely try to make this again.

I believe he used a mixture of various nuts (hazelnuts, almonds, peanuts) so maybe in the 1/4cup ammount you can use whichever nuts you want (those are my toughts)

Your Nutella has a bit more runny consistency than I'd want it to be but it tastes perfect. Thank you for a nice recipe, Byron. The best homemade Nutella I've ever made (and I've made a few). PS. I used 3/4 cup brown sugar (the spread is sweet enough for me) and added 1/4 cup whole dried milk to thicken the mixture a little bit.

i ve tried this recipe and it is very nice, but i would not say "almost identical" to nutella, cuz it is actually very different. this might be even better (you can have control, make variations with vanilla, sugar, coconut, almonds etc) but not identical.

I substituted brown sugar with sweet dates and substituted some chocolate 🍫 with carob powder and clove powder, so light and yet wholesome ( any water in the recipe I substituted with cinnamon tea)

Dark chocolate with 60% or more cocoa is healthy too. Along with unsweetened cocoa powder. You could actually make this really healthy too.

It's okay to leave it to cool down, but the purpose of doing so while it's still hot is because when you add in the chocolate it helps melt it. Other wise you could just microwave the mixture when you're putting the chocolate in. :) I hope this helps, good luuuck :)
