The Italian version of the Longaniza:

Here are my amounts
For 1,600Kg. of pork, 400gs. (approx) of bait or pork fat.
50g of salt
10g of sugar
3g of white pepper
10g of sweet paprika or paprika
10g of ground chili
20g of fennel seeds
5g of ginger
5g of garlic powder
5gs. nutmeg (optional)
3g of oregano
3g of thyme
1g cumin (optional)
