Barry, If you had allowed the eggs to get to room temperature before boiling them, instead of using them straight from the fridge, they'd have peeled much more easily. Also, laying your meat on a sheet of cling film before you put the egg on it, and then drawing the edges of the cling film (and obviously the meat with it) up around the egg, will shape and seal the egg in very nicely.

Crack your eggs when yo dunk them in the cold water, which gets water under the shell and makes them easy to peel. Also, chef johns method of steaming eggs is the bestest

Mace - is the outer aril of nutmeg... But those whole nutmegs you have there; the mace has already been removed. If it was on the nutmegs they would look they had a red net around them.

And freshly ground nutmeg is stronger than pre-ground because the aromats will evaporate faster from the latter. Just like with pepper.

Mace (the spice) is also totally unrelated to Mace (the "Pepper Spray"). Although its called Pepper Spray it actually doesn't contain Pepper either, it uses tear gas.

Right? It might seem like a waste but he needs to use a bigger pot with more room for the oil / food. Having it so full makes it so easy for the oil to potentially spill over.

Scotch eggs have always bewildered me because you have to worry about not overcooking the egg whilst also making sure the sausage is fully cooked. Seeing that you got it bang on first try is awesome!

I work as a chef at a busy resteraunt, and we have homemade scotch eggs on the menu, which we have to cut and serve with a nice runny yolk. If you thought peeling those 4 soft boiled eggs was hard, you gotta try making 500+ of the buggers a week :p Great video :)

@@Okurka. no i am sure the lead or head chef doesn't. but that's what lower level or prep chefs and apprentice chef do. that's how the learn to become great chefs...practice practice practice.... and if its a small place they may have to...

@@mordeys ok, as a head chef myself I will just stare at the next batch of soft boiled eggs until they magically de-shell, or force another team member to do my dirty work on my section while they are already busy enough with their own prep jobs. Is that what you're saying?

@@ambernorris2761 no.. ease off there a bit. i was saying that head chef usually are very busy and tasks like prep work are usually given to lower level chefs so that the can become more knowledgeable and learn. i have worked in very big kitchens and my head chef was busy with menus, pairings, new meals, ordering.and fighting with the front of house to peel 500 eggs.

Scotch Eggs were reputedly invented for the London store Selfridges, in the early part of the 20th Century. I was taught how to make them at school. I made six, using small Pullet's eggs (the first eggs a hen lays - and they are delicious) not one of which made it home, as me and my best mate necked them on the way home. I made some many years ago that I put Black Pudding and Haggis mixed in with the sausagemeat. They were ridiculously moreish. Fun fact: if you eat a lot of nutmeg in one go, it will give you a day or so of horrible psychotic hallucinations, that can cause permanent damage. Just great.

When I have made Scotch eggs at home I just boil the eggs, wrap them in sausage, and then bake them. They are still good!

If it hasn't been stated already, older eggs are MUCH easier to peel when they've been boiled soft-hard. The membrane on the inside of the shell loosens from the white of the egg given time. After 1-2 weeks the eggs that are boiled will almost slip right out of their shell. This past easter weekend I made the mistake of buying 36 eggs to make into Deviled eggs, about 6 of them were ruined because the shell wouldn't let go. Great video! I need to make scotch eggs for myself soon.

I’d love to see you make a ‘picnic loaf’ where you hollow out a cob loaf and layer it with all sorts of yummy sandwich fillings...really you should just do a picnic themed video, with a few different recipes haha

If you are going to try this again using an air fryer, maybe using a frozen raw egg , peeling it and replacing it instead of soft boiling the egg may help encase it in the meat a bit better as it would be more rigid and wont break under force. the temperature of the air fryer can then be lowered compared to what would normally be used and then cooked for longer to make sure that the egg white is be cooked.

Mrs B with the picknic made me just think of a suggestion for you!: Make an entire Homade style picknic, so make everything that you'd normally have (+ extra) in a picknic all homemade so suassage rolls, these scotch eggs, make gourmey style sandwhiches + all the handmade drinks aswell, taking stuff you've done recently and putting in into one Full picknic could make for an interesting video!

The bizarre thing is you would expect the yolk to go hard as the egg is fried, then cooled. It actually stays soft, not as running as hot but very soft and not as messy. Great channel.

Agreed, but you have to remember that the yolk is protected by three layers of food that need to be cooked before the oil can really get to the yolk. If it were in there too long I'm sure it would come out burned with a hard yolk.

You can use the handle of a teaspoon to help you peel the eggs (just make sure the handle is not too thick (slide it carefully under the shell and membrane to dislodge them, helps if you carefully roll the egg first to crack the shell into small pieces ).

I have had great success peeling soft boiled eggs under running water, sort of let the water get between the egg and the shell to loosen it and it usually comes apart quite nicely.

Hey Barry! such a fun video as always. Mace isnt the outer shell of nutmeg, but its a thin covering which surrounds the nutmeg itself, its generally an orange or deep orange color and is super fragrant, looks just like a little flower! Used widely in India for garam masala. Hope this clears it!

Hey Barry, one trick to peel soft boiled eggs is to use the back of a thin coffee spoon (or equivalent) instead of using your hands. Gives you much more precision in removing the shell.

I strongly prefer baking scotch eggs, I find it preserves the runny yolk well and is just less greasy than the fried variety

Here in the US, soft boiled eggs are pretty uncommon. So our scotch eggs always have hard boiled eggs in the middle. Still so delicious! Now that I think about it, the scotch eggs I had in Ireland were HUGE and also had hard boiled eggs in them.

Years ago my partner and I got runny scotch eggs from marks and Spencer's meal deal and they were gorgeous. I think from memory they were made in the oven. Never seen them again.

love this one. I made scotch eggs for the first time this year and my family really liked them (we had never even had them before). I have considered trying to do them in the air fryer assuming it would be easier, so glad you tried it first!!

I love making scotch eggs. I've bee making them for years. You should try cooking them in an air fryer. Less oil, same crust and so very delicious. :) Also, quail eggs make amazing mini scotch eggs.

For the soft boiled eggs i find it easier to pop them in the cold water for 30 seconds to a minute then take them out and gently crack the entire shell then without peeling pop them back into the cold water for ten minutes to let the water seep into all the cracks and under the skin while it completely cools then the shells just slide off with barely any touching then i pop them into clean water and into the fridge until ready to use as it helps keep them intact.

Love the video. When I made scotch eggs before, I baked them and they were very nice. One tip I saw and did when I made them is to flatten the disc of sausagemeat on a piece of cling film, then pull the cling film up around the egg and twist it tightly at the top. That way it squeezes the meat around the egg and makes a nice round shape.

Spread your meat on a sheet of clingfilm and use that to help mould the meat around the eggs. It's a lot cleaner and helps to form a nice even shape

I don't know for certain how well it works, but one of the things Natalie and Tara tried on "Natalie and Tara Try Stuff" was putting a bit of baking soda in the cooking water to make peeling eggs easier. I've never tried it myself, and they only did hard boiled eggs, but it seemed to help, so maybe it'd make peeling soft-boiled eggs easier?

The scotch eggs in the supermarkets are always so spongey and cold that I've never really liked them but you had me drooling at the hot and crispy exterior along with the yolkey egg - feeling rather jealous now!

To help you to avoid the eggs from overcooking try double coating the breadcrumbs. It should be a thick layer. Also the tip about using the cling film to form the meat over the egg is a very good one. As for the suggestion about using black pudding, I think that I wouldn’t do it with just black pudding but I would crumble it up and mix it in with the minced pork.

If you want flawless boiled eggs that are dream to peel, do them in an instant pot. 5 minutes at pressure for hard boiled, and 2 to 3 minutes for soft boiled. Ice bath right after and do the crack and roll on counter technique for easy peeling.

Very interesting about mace, my family keeps it in the house because we use the smallest amount in fruit cake every year. It is what gives fruit cake it’s distinct taste.

If you want easy-to-peel boiled eggs (soft or not), use older eggs, not fresh eggs. As the egg ages, the inner membrane separates from the albumen, producing the "egg shell comes off in one slippery piece" you always want. Make sure your eggs are at least a week old or a bit more.

Barry- years ago you had made an avocado encasing the soft boiled egg all wrapped up with sausage Scotch egg and you had the same problem peeling that soft boiled egg. But you did it!

This is like the Schrodinger's cat of egg preparation. Once encased and cooking the yolk could be runny or cooked through.

Pub I used to go to did lovely Scotch eggs with runny yolks and piccalilli on the side as a starter/snack. I hope it reopens as lockdown eases. Of course in the meantime I shall try this.

Eggstradinary results. More art than science with Scotch Eggs. I've had good luck using a steamer basket instead of immersing the eggs in water. Also, using older eggs works better.

I also winced when I first heard it, but fish and eggs usually goes well together. An egg sauce is nice with both fried and poached fish, and I'd never turn down a nice kedgeree.

Hi Barry. Instead of making your Scotch Eggs with sausage meat, Maybe you could try making them with the meat from a Haggis. That would be a REAL Scotch egg.

Mace is actually the sheathing around the nutmeg. It's a yellow fruit with a seed inside & the seed has a wrapping around it. The wrapping is mace & well, we know the seed is nutmeg. When you walk past the tree it has a sweet smell rather than the nutmeg smell we know.

There's nothing quite like a hot homemade scotch egg. A breadcrumbed adaptation of the Mughlai nargisi kofta that's simply delicious. Also, when you brought out those little Quorn eggs, I got flashbacks to the Poundland Sandwich Special where you and Stuart dug into a tub of party eggs.

Can't buy them in many places here in ireland, not where I live in the middle of nowhere...first thing I'm gonna buy now the 5km travel limit has been lifted is scotch eggs and crumpets!

I just found this video, so IDK if you use an instant pot. When I make scotch eggs, I make them in the IP, cooking for 1 minute with a quick release and right in the ice water as quick as you can. They peel easily. They are still delicate, but just handle with care. If you are going to air fry, be sure to spray with a bit of oil so it will get brown & crispy.
