My uncle brewed some o that honey liqueur up 3 years back from his own bees. He's got like 10 boxes of bees. I don't know how many quarts he brewed off, that shit was so fucking good he was selling it off for $50 a quart and in one weekend he sold that whole batch. He saved back a little bit for friends and family. Best shit I ever put across my lips.

If you do still have some of that left or when you do make another batch. Might I suggest that you blend it with some tequila. It's called "Dulce" and it costs about $60 a bottle, but it tastes great.

if you use a 8111 champaign yeast , you'll consume ALL the sugar the honey has...and because you're "back flavoring" in the thump keg... You'll get longer heart runs. You'll still get they desired flavor but WAY more product for the money.. Just my opinion.

that DADY is a slow big yeast like a big slow d47, with a LOW alcohol toterance and it doesn't clear" out of its own way when it comes time to run it...its messy

Have you tried taking some reg sugar shine and running it with honey in your thumper? Curious if it would take the sugar bite out of it? It’s apple season here in the north currently and that means hard cider and apple brandy. Cheers brother

Honey is water soluble, no need to heat it whatsoever (even if it has crystalized)

We had to heat the water up to 95° to pitch the yeast anyways so we figured why not toss the honey in there….
