In the states we have less than acceptable mixed fruit, so I do the following: Divide total weight by 19 to get 1 part, then: 1 part chopped lemon peel 1 part chopped orange peel 4 parts currants 4 parts glacé cherries (halved or quartered depending on bake) 9 parts sultanas (can divide between raisins and golden raisins) Example: 175 g mixed dried fruit for buns 9 g orange peel, chopped 9 g lemon peel, chopped 37 g currants 37 g glacé cherries, quartered 41 g seedless raisins 42 g golden raisins

Really want to give these a go but I don't have a stand mixer. I do have a food processor that has dough blades will that be able to start it and then kneed by hand for a bit longer?

Just made these and feel like my dough was initially quite wet and i did have to add a bit of flour in the kneading process to get it springy and smooth. is that because i used plain flour? or maybe i stuffed up the recipe? Or is that normal? haha

Do you think it's possible to make the dough part successfully by hand( I don't have a stand mixer😢)? They look absolutely delicious💜

I would guess it's possible. It will just take some work i e kneading. I don't own a stand mixer as well and I make all kinds of yeasted doughs on a regular basis. This dough seems to be quite sticky and those are usually tricky to work with because of the temptation to put in more flour to make it workable. Try to avoid that as much as possible because it would result in a tough baked good instead of fluffy and plushy goodness. I would use a wooden spoon in the beginning and switch to hands once the dough sort of comes together. Also, I would put in the egg together with the other liquid ingredients because it's quite difficult to mix through later. For incorporating the fruit, I would switch to the counter and work them in in batches. Good luck! ... now I really want to make these!

This seems like it will be really sweet but at the same time I'm thinking I'm definitely making this for Easter. UPDATE: these were delicious but don’t do what I did and use all the frosting lol it gets a bit oversweet. A cross is enough. spread it around but don’t add more!
