You could of course use noodles here in replace of lasagna if you really wanted to. The stuffing is made with a sauteéd lentil mushroom mix and the eggplant is layered with vegan pesto and homemade tofu ricotta with fresh herbs.

I never really liked eggplant but recently I've been OBSESSED. My favorite easy way to cook it is cubed, tossed with olive oil, curry powder, garlic powder, salt & pepper and then roasting til it's caramelized and soft. It's perfect!!! Highly recommend.

Don’t worry Lauren, we know this is DELICIOUS and not some way of using veggies in place of noodles because of some bullshit fear of carbs everyone seems to have these days. Eggplant rollatini is a tried and true Italian American classic. I can’t wait to serve these at Christmas.

Lauren never talk negatively toward your food. Only loving words to your food. That eggplant is made up of a lot of water and water has memory so every time I cook I send it good vibes and say Love and gratitude to it. All food made with love.

I have a love/hate relationship with eggplant since I was little girl (problems if you grew up in a Indian household).... but NOW I LOVE EGGPLANT incorporated into other dishes besides Indian cuisine for some reason! Thanks god! I went grocery shopping and I brought eggplant! Kitchen here I COME!

I've had eggplant a couple times and although I don't love it, I don't hate it either. I've never cooked with it myself though, so here's the golden opportunity! I've been craving lasagna roll-ups actually- I made some awhile back that won second place in a lasagna cook-off and no one knew they were vegan until after they voted! BOOM! Thanks for another great recipe Lauren!!

Looks amazing. I would add walnuts as well to the lentil mix and after it's all well cooked/browned use a potato masher and mash it all up a bit. Delish

Made this and it was delicious! Changes made: Used vegan ground beef crumble stuff instead of lentils (used more seasonings than stated... everywhere lol) Our eggplant didn't get dry so it was hard time cutting it when cooked but it was still good Used lemon juice and nutritional yeast in our tofu instead of apple cider vinegar (doubled the tofu ricotta cause I like lasagna cheesy) Got lazy and didn't roll the eggplant and just layered like traditional lasagna Made about 6 servings

In the Caribbean we cut it in cubes and soak in water to get rid of most o fthe seeds then fry it up.with tomato paste, onion tomatoes and garlic..some soy sauce, seasonings and add water to make a stew. Goes great with rice.

I love lasagna. Thank you for a different way to make it. I want to use eggplant more often but never had any recipe ideas for it. I’ve had sushi at a Japanese restaurant where they grilled it with sweet eel sauce (sweet soy sauce) and top it over sushi rice. The delicate texture resembles grilled mackerel or tuna!! Yumm!!

Great recipe and video. Good idea to use Eggplant, it makes a change from standard lasagna pasta. I don't mind doing the preparation because the end result is worth the effort.

I used to hate eggplant too but now i love it because it can get soft and gooey. So eating something like a thinly layered eggplant parm is sooo delicious because everything is saucy and soft :P

I hate pumpkin/squash and sweet potato but eggplant is amazing; as I have started to eat more plant based I make eggplant parm now instead of using meat and its fantastic. I can honestly say I don't miss the meat and in someways its richer if that makes sense. Great video!

my sister and i were super picky eaters growing up but we absolutely loved sri lankan tamil EGGPLANT CURRY. you’ve got to try it. the eggplant is spiced and deep fried. It’s either in a wet curry or “curried” and fried and tossed with raw/pickled onions and thin strips of green and red peppers. TRY IT!! i won’t eat eggplant any other way, only fried!

Yum rollatini. I learned that you salt the eggplant to remove the bitterness. Thats what my mom always said. Your recipe is a bit different than mine, I will be trying it. YUM

I’ve made the tofu cream cheese 3 times already and love it. Great in sandwiches and even turned it into a creamy pasta sauce.

Hey. We cook in Russia like this. Very simple and quick to prepare rolls. ✔ Prepare the filling: ▪︎oil fry with garlic ▪︎ add grated cauliflower ▪︎ remove from heat and cool ▪︎ Add cauliflower to green onions, parsley, mascarpone, grated almonds, salt / pepper to taste and apple cider vinegar ✔ Cut the eggplants into thin slices ✔ Fry on both sides in coconut oil ✔ Put the stuffing and wrap roll.
