Here is theory a came up with a few months back that supports the “pancakes” argument however I now believe it is a combo of both “pancakes” and what is described in this video (Copy pasted from discord) In Ace Trainer Liam's video he half-jokingly proposed that "Puka the surfing Pikachu has Cataracts" and it got me thinking. Perhaps all aloan riachu's suffer from Cataracts. Both the high expourse to sunlight and high blood sugar increases the risk of Cataracts, and the loss of vison tends to cause the body to increase the alertness of other senses. So perhaps the riachu of aloa had psychic powers that got stronger and stronger as their vison deteriorated to make up for their imparied vison.

Thing is high amounts of blood sugar can also make you feel more lethargic. So the pancakes could play multiple parts here. blood sugar actually can release large amounts of serotonin and dopamine which would actually mean that just by eating Raichu would be making itself happier and counteract stress. Which may mean that in alola, every time Raichu felt stress it would eat and conduct recreational activities to calm down. Over time, that means it would start to naturally evolve to handle that stress using these practices. Eating to calm down, and surfing to discharg, to the point it fully mastered it's stress response. The act of doing so would have very likely unlocked it's psychic typing because Raichu would have had to have mastered it's own mind in order to reach that point.

What I love about that explanations is that the official explanation is "We have no idea, we think food and climate of Alola contribute" and while all the scientists are flooding Alola to do research to figure this out, the locals without a care in the world, just shrug and say pancakes.

Now this has been in debate for a long while, but I personally think Alola just hates the idea of Mega Evolution compared to Kalos and Hoenn who discovered, and later utilize it. Heck Kanto got dex entries for them and they weren't all this dark stuff, even on Pokémon who got Mega entries in Alola like Kangahskans. Considering M19 and heck Korrina's Lucario in the XY anime, I am willing to say the people of Alola hates Mega Evolution because they know the pain Mega Evolution causes and thus is often advised not to do. Though the other regions either turn the blind eye or believe the power of friendship can mitigate the effects (which they evidently do). It's quite interesting there is a _dash_ of conflict between two regions, aka like reality. You never see this often in the Pokémon games.

As for the pancakes being referred many times, its possible that it could be part of the relaxing nature. Eating food can help ease stress and aggression. And nothing is more sweeter then the bite of a fresh made, fluffy pancake. So I feel thats how the pancake entry adds to it as well.

I really like this idea for why Raichu became part Psychic My theory had been related to Akala Island and that the nectar on Akala island must've contained nutrients that heightened the mind which is how Akaka islands Orocorio is Psychic and possibly this nectar was a main ingredient in the syrup used in their pancakes which for certain Pokemon could unlock Psychic abilities deep within which is why Alolan's thought it was due to pancakes, but given Pikachu don't live on Akala island it was always a stretch of an idea

I always figured that Alolan Raichu's psychic type occurred as a defensive adaptation against Sandyghast and Pallosand since they would be Pikachu and Raichu's natural predators due to being ground and ghost type. Sure, psychic may be weak against ghost but the Alolan Raichu's ability to float above the sand on its tail keeps it out of reach of the Sandyghasts and Pallosands. Admittedly, this is based on that one promotional image for Gen 7 that features a Sandyghast about to eat a Pikachu.

I think there's another possibility for how they gain the psychic type: The relaxing nature of the Alolan region and it's tropical climate lets Raichu handle the stress of electrical buildup, instead of having to discharge it. Since they're keeping all that latent energy and overcoming the intense mental stress it causes, they naturally develop their psychic type. It would explain why only Alolan Pikachus evolve into that form: it's the only place they can calmly overcome such an intense level of stress.

I like this idea a lot, and I think that the psychic typing could also be attributed to the lack of stress. When stressed, you make quicker, potentially riskier decisions. A relaxed mind can evaluate slower and approach with wisdom, like an old surfing guru. the psychic type is a literal interpretation of that wisdom and clarity.

There’s some other possible evidence for “latent” psychic ability as well. While a dark type move rather than psychic, Pichu is one of the lucky few Pokémon able to learn Nasty Plot via level up. While much coarser in nature than, say, Calm Mind, the effect is similar in that it unlocks massive potential for offensive power (in let’s Go, Pikachu can learn Calm Mind as well) Also, while this may tie into having hands more than anything else, the Pikachu family has above average movepool compared to many electric types, learning moves such as Grass Knot Speaking of movepool, the fact that special individuals of the species can be taught to Surf and to even FLY implies a cleverness more akin to a psychic type than most electric types. And in Let’ Go Pikachu, your starter Pikachu is able to not only learn how to slash trees, traverse water, and get a Pilot’s License, but Flash is replaced by what I can only describe as Extrasensory Perception. Perhaps Raichu is capable of using its electric powers to stimulate BRAIN activity as well as muscle activity, and Alolan Raichu, in an environment with fewer potential predators, was able to “ease off” of its reliance on physical overcharge (which I also headcanon is why Pikachu can learn Volt Tackle if the parent held Light Ball: it learns to use its internal power to overclock a ramming attack, dealing incredibly damage). Amazing theory pointing to the less stress of Alolan Raichu causing them to be more focused and develop Psychic Powers! I would like to point that in Pokemon Masters (EX) Hau theorizes that the (or a) reason for its regional form is that it learned to Psychically float to gain easier access to pancakes. Not necessarily confirmed, but something to think about.
