He left half of it in the pan because it wasn't even cooked. He was going too fast. It's ok, everyone makes mistakes sometimes, but those aren't what Gordon's eggs are supposed to be.

When you place it on the plate, there should be wet eggs that are to temp and finish cooking on the plate, no longer wet by the time they are eaten. Dry eggs, lol
