what kind of cable is used to connect the display to the unit itself? Is it a RJ11 connection cable like used for phones (at least in netherlands) it certainly looks like it..

Yes it's similar to the old phone jack connectors.

I just bought a Gallagher MBS 1800i, is this unit made for indoors or can I leave it outside. Gallagher website shows it mounted outside with just top and sides front open? I built a little wooden box for it. But just wanted to make sure, I got mine installed already. Really nice, just don’t know if it is waterproof or not.

The digital read out can be installed outside in the weather. It's waterproof up to 3' of water. The charger itself isn't waterproof by any means. Water can't get into it from the front at all, but around the sides where the seam is at and the upper backside, that's where moisture can get in at. They don't run that hot inside, so you were right to put it in a box of some sort.

When you hook it up to the fence and ground, what does the display show exactly? How are you testing the fence? And how many ground rods do you have for the charger?
