Hi Everyone!
In this video, I will show you how I bake large batches of Jamaican Fruit Cake. I will be doing it the traditional method which can be time consuming but the end product will taste amazing and be even more rewarding.

Recipe
5 lb Butter
5 lb Sugar
5 lb Flour
5 dozen Eggs
8 lbs Fruits* (soaked in Red Label Wine and Jamaican White Rum)
4.5 cups Burnt Sugar
3 cups Molasses
2 tbsp Mix Spice
2 tbsp Nutmeg
2 tbsp Almond Essence
2 tbsp Cinnamon Powder
5 tbsp Vanilla
3 tbsp Rose Water & Almond
1 tsp Salt
4.5 tbsp Baking Powder
Zest of 6 Limes
Juice of 6 Limes
Strawberry Preserve (Optional)
Sweet Orange Marmalade (Optional)
*Fruits include mixed peel, raisins, prunes and cherries
**Add more spices if desired
Directions
1✅ 2:14 Cream butter and sugar in mixer until light and fluffy.
2✅ 4:44 Grate lime zest and juice limes, removing seeds as necessary.
3✅ 6:00 Crack eggs, removing germ (eyes) as necessary. Add to mixer and whip until frothy.
4✅ 7:00 Sift flour then add mix spice, nutmeg, cinnamon powder, salt and baking powder.
5✅ 8:10 Blend fruits that have been soaked in Prune Wine and Jamaican White Rum. Add almond essence, vanilla, rose water and almond to blended fruits. Blend for about a minute. Add sweet orange marmalade and strawberry preserve to your liking.
6✅ 11:00 Combine creamed butter and sugar with egg mixture in a large mixing bowl. Add lime zest and mix.
7✅ 11:39 Add dry ingredients to wet ingredients a little at a time until the mixture is creamy and smooth. Be sure to cut the center then fold it over while scraping the bottom and the sides of the bowl.
8✅ 14:39 Add fruit mixture, burnt sugar and 3 molasses. Mix well.
9✅ 16:43 Spray cake tins with non stick cooking spray and dust with flour.
10✅18:15 Pour mixture into baking tins.
11✅ 14:39 Bake at 1.5 hours at 180°C/350°F in preheated oven.

Hi, i would love to use your recipe but i dont want to bake such a large batch. Would like to bake about 10 9inch. How do i adust the recipe

@@babybridge7830 hi thanks for watching. Try cutting down to 3 pounds of mixture and see how well that works, so if you do 3 pounds butter ,3 pounds sugar, 7 1/2 cups of flour , about 5 pounds of fruits.

I made it actually. I put the red cherry on the cake first then I cut a green cherry into four and used two pieces as the leaves. 💚❤️

Hi thanks for watching my video, to do it from scratch can be bitter if you are not careful, but you can try . The one I use is very thick not sure how they make it. If not just go ahead and use a browning you trust.

So for the burnt sugar, I had purchased mine at the store. I just added it directly to the cake and I used it to replace the browning. If you use browning though, the amount depends on how black you want your cake. I apologise for the length it took me to reply, hopefully this helped.

Love this although I probably would cut down on the sugar because of the other sweeteners such as the soaked fruits and the jam preserve but that's me.

Hi thanks for watching my video, Yeah it’s a preference give and take these cake wasn’t sweet though, Using the cup measurement helped me better to cut down on the amount of sugar and flour I use, so you just have to know equivalent cups of sugar to lbs of these ingredients

Thank you so much 😊 Sorry for the late response! You can add a 1/2 a cup and add the brown sugar accordingly until you get to the desired colour you want to achieve. Hope this helped.

When you use the foil pans do you have to line it with parchment paper or can you just spray it with nonstick cooking spray?

I don't normally line it with parchment paper. I usually just use the nonstick cooking spray.

Hi Cj, I absolutely love your recipe. 1 question though, how long can I have my batter sitting out while I bake other cakes? My oven isn’t big enough to hold all the pans at once.

You could use one pound less sugar because you're using fruit that is already sweet plus the wine is sweet too. We have to cut back on excess sugar in our diet

I can’t believe it’s not butter is a good one but I sometimes uses the Kirkland from Costco lbs butter or the country crock. But I love ICBIB

Thanks for watching I normally mix the white rum with the red label wine and pour about a half cup over my cake just as they come out the oven. Also when cook make sure to seal properly it will help to keep cake moist.

Thanks for an excellent video. I do my cake with a pound of everything. Some questions Is there much difference baking the cake in pans then transferring it to the foil pans to give to friends. What is the time for baking? What is the difference in texture by adding the eggs one at a time. That is how my elders taught me. Does the jam make it sweeter? Your response would be appreciated. In which city do you live? Thanks.

Thank you! I'm in Orange, New Jersey. So the eggs and the lime helps to make the cake firmer I find. Also, the jam does add sweetness to the cake so you can remove some of the sugar, that is optional though. I suggest you bake it in the foil pans directly just to eliminate the stress of transferring it and the cake baked in a cake pan might not hold in the foil pan. Plus you'll have less washing up to do! Haha!

A question so when u put in so much burnt sugar i am sure it is going to be extra sweet with the browning its not sweet an u wouldn't have to put in so much just saying....

Good morning welcome to my channel! Burnt sugar does not add extra sweetness to my cakes at all. and it’s also optional to the amount of sugar you will use in your Products.😇

Hi, thanks for watching my video to make 55 7 inch cake. Wow , I would say for each cake you need at least a 1/2 lbs of fruits. Because we’re making a fruit cake do you want to make sure you have enough fruits in there. I hope that helps.

Hi thanks for watching my video😊 you might be able to use three bottles small browning if you’re in Jamaica get the Grace Browning , or while you mix you can also see the desired color that you want to have. Also sometime it might look to the naked eye before it goes into the oven lighter but when it comes out of the oven it’s darker.

I honestly I have not used Browning in a long time but it depends on the desired Darkness you need your cake to have but I would start with three bottles and then gradually add a little at a time

Thank you for watching my video I have not had that problem but this pans deep punctured very easily as well it also depends on where you buy them the quality differs I use nonstick spray plus dusting with flour. Maybe you can try buying your foil pan somewhere else.

Hi thanks for watching my video . Always put water in a pan at the bottom of the oven, and slow bake prevent cracking if crack pour wine rum immediately when take out oven cake will come back together.

When the oven is too hot it causes your cake to dry out too fast and that’s what caused it to crack
