I just placed my first Butcher Box order, I want my health and energy back. Reading comments I find many our age and older very happy with Carnivore.

I drink coffee with mascarpone. In omelet I put mascarpone in stead of milk. My desert in the evening is sheep yogurt with mascarpone. Mascarpone is delicious!

I’m glad I’m not the only one who “isn’t there yet”. I’ve been trying to eat high fat but can not eat straight butter. It makes me gag! I’m glad you showed different ways to get the fat in.

Yum! I call the crispy fat trimmings meat candy. They are so good fried up just until brown and salted. Very, very filling. I haven't tried the pork jowl in years. It brings back memories of me spending time with my girlfriend at her grandmother's house when the family would go over to butcher the hog and get everything ready for either hams in the smoke house or canning meat and lard for use later on during the winter. We would be in the living room playing Monopoly while the adults were busy in the kitchen. But the whole house smelled wonderful. I think your idea of mixing the tallow with the butter is an excellent way to get in another fat beyond butter. I may have to make a trip to the butcher to see what they have on hand.

*Anita, the half butter/half tallow idea is brilliant💡So glad you mentioned it, as I've been considering the same possibility- a possible sensitivity- w/the amount of butter I've been eating lately. Thanks so much, once again~ it's truly helpful when we can all share like this, & I seem to get along a bit quicker, & a lot smoother even than I might have on my own.=)

I do a large fatty latte with 2 TB of butter, 2 TB of lard or tallo, 4 TB raw heavy cream, 3 eggs, whipp it up and top the froth with pink salt. Yummie!

@@mindingmybusiness6309 oh, no that would not be total fasting, but if you leave out the whites, that brings it back down. It has very low protien that way. Yolks are high fat. Depends on the ratios you're looking for.

@@carlahines2971 yes it’s amazing. I froth it all up with an immersion blender. And then sprinkle good salt on the froth. If you don’t want any protein you could leave out the eggs or maybe just do one yolk for nutrition. The eggs make it froth nice

my fat fast was fatty blender omelette. put lots of grease in your cast iron pan...As you heat up the pan low/medium. Blend up 2 eggs and keep them blending. pour in some hot grease. Don't be shy...eggs seem to only absorb 4;1 fat;protein maximum. Pour the egg mix into the pan, ideally, you want the pan to still have some grease in it. Light, fluffy, 12g protein, 50g fat. More protein than a normal fat fast, but still excellent for lowering glucose and insulin.

Had the same experience here in Los Angeles. The butcher just handed me all the grass fed grass finished fat trimmings packed up with no label. I saw there was no label and asked and he said no charge!

I think you are on to something. I haven't done a fat fast yet but approaching 80/20 (basically cutting my protein way down) has gotten my hunger and also sweet taste urges under control. After nearly a year my wt is going down again . Thank you so much .

You turned us on to beef fat trimmings. We had a huge bag in the freezer for making sausage and had never thought to cook them. We've done the air fried, and my husband ran some through the grinder and seasoned with homemade taco seasoning.

Very informative and a great video! Bone marrow tip: I make whipped bone marrow: I bake it, collect it from the bones and wait until it congeals at room temperature, then I whip it up with a hand mixer. It looks like whipped cream once whipped. Then I put them in little chocolate molds and freeze them and keep them in the freezer. I usually put 2 in my cup of hot broth (delicious that way) or one can put some on steak or add it to eggs or anything else really.

@@superluci58 The chocolate molds for making chocolates don't have oxalates, they are just molds. She didn't say she ate chocolate. If you are going to be the carnivore police at least read it before passing down your judgement.

My favourite way of eating the beef fat trimmings are raw and frozen. I slice them thinly then freeze in layers before bagging. They are chewy and waxy but sit better than the liquid fat for me xxx

I eat them the same way. I cut them in very little bites and just take some out from the freezer. They actually taste really good or I would say they do not taste much (not the waxy feeling or taste you get from tallow) but have a slightly buttery taste, very mellow.

I am fat fasting for the very first time today. I just made fat bites for the first time as well. I used a 1/2 lb of salted grass fed butter, turned it to brown butter, and added 1/2 a cup of bacon fat. I portioned them in 1 tbsp portions, which works out to 106.4 calories per portion.

I started eating air fried beef trimmings! They’re amazing! I batch cook them and store them in the freezer. They’re dangerous for me though lol 😂 I snack on them a lot. They’re delicious even straight from the freezer 🤤 I also just put salt. Thanks Anita for this video. I will try to do fat fasting every Monday now, too!

@@gladysobrien1055 I buy beef brisket at Costco. Plenty of extra fat to be removed before smoking it. I cook/melt the fat and pour into molds like the one shown here - holds 1 tb. Freeze - snack on straight from freezer - nice crunch. Other times I toss into pan to cook other things.

@@jj..- You can ask any butcher - grocery store, butcher shop, etc. for beef fat trimmings - it's just the excess fat they cut off the cuts of meat - the area from the kidney is the leaf fat so not likely that. They're usually under a dollar a pound and as long as you call in advance, most places are happy to sell them to you. You'll be getting non-uniform chunks of fat - order by the pound. myzerocarblife talks about these in one of her latest 80/20 vids. Good luck! Liz

Same here, and I wonder what is the purpose? I've been carnivore 4 months, and I don't want to stop. It's helping me put my RA in remission. I no longer take medication the Rheumatologist prescribed. My only problem is that I don't want to lose any more weight. I'm only 115 lbs.

@alert1006 as far as I understand, you just have to up your caloric and fat intake to keep your weight at what it would healthily be. Steak and butter gal says to eat till you're comfortably stuffed. Others would rather split their day 2500 calories split into 4 smaller meals instead of 2 larger meals.

Back in the day when we would go hunting we would purchase suet that looks like the bag of ground beef suet . We would mix the suet with our venison that is ground up . “The hamburger suet " is what makes our hamburger 80/20 Thank you for exposing these different food items that most people probably never thought about eating but everything you showed there is full of flavor

Hi! Wonderful video with lots of detail and great suggestions! Love the way you experiment and share what did, didnt work or may try next time. My mother (she would be 105 right now) used to trim all the fat of the beef and pork that she bought off the butcher. She asked they not trim it prior to selling it to her. She would fry the trimmings in her iron skillet until the outside was browned a bit. She would then put thim on a plate and lightly salt, pepper and use a powedered garlic on them sometimes. But always salt and pepper. She served them to us as a treat. We loved them and whenever we knew she was in the kitchen making this we would patientlhy wait at the kitchen table. She called them 'girshsticle' I believe. It was a European favorite from what she told us. Keep up the great vids!

@@KetogenicWoman Ironically enough, this is how ppl ate back then, they did not have the weight issues, HBP and other issues we had. Most were quite healthy. I never saw any pics of my mother or grandmother other than very svelt and healthy looking as well as all the old pics from ppl and relatives. Only since the low fat hypothesis did this start to become and epidemic in this country and others. We know how to eat back then. Love your channel!

I seldom comment but I thought I would tell you that here in the south, North Carolina, where I am at, etc., pork jowl is part of our traditional New Year's Day meal, you can buy them whole or sliced or you will have the butcher cut them the thickness you want, the rind can be tough if you are slicing them yourself, so be careful, then they are fried, they do splatter a lot so be wary but fried up they are better than bacon because they have so much fat in them, I am sure not everyone has them at their meal but we always do, I wasn't sure if you had ever eaten them before!

Moovin On Estate Sales 1 second ago Perfect timing for me to find this video, we raise our own beef, pork & chicken - just got back 2 beef & 2 hogs from the butcher. Started 80/20 today and really wanted to know how I could use the suet/lard (fat) with my meals other than rendering and frying in. We always have all our fat ground because it makes rendering quicker than when it's in chunks. BTW...You are looking really great - I just watched a vid from you in Nov and I am amazed at how much better you look (always pretty of course) but you just look so healthy! Love your content - Liz

I cook my long marrow bones in my sous vide cooker at 168F for 2 hours. I add a bit of butter and salt and stick blend it. Perfection!

I'm never investing in Wagyu after investigating what makes it special. The cows are force-fed an unnatural diet (very high carb) from birth in order to make them fat.

I love the idea of half butter and half tallow! I have done butter and bacon grease before. I was hoping to see what you do with the hog jowls! I buy jowl bacon from a local butcher but not tried regular uncured jowl yet. By the way...tallow is an excellent skin cream!

Fascinating! I'm thinking of mixing beef, bacon, butter, and avocado fats together to try and expand the nutrition and also maybe let them be a little softer right out of the fridge. Maybe I will add cream cheese and cooked onion since I'm a little more keto. Love the time lapse of Teddy! He's so precious!

Anita you are such a great teacher!! Everything looks so good too. I've made beef cheeks, I guess similar to your pork jowls? VERY fatty but oh so good!!! I just cooked them in my Instant Pot and then browned up in the air fryer. As for bone marrow, I mixed some butter into mine and whipped it up. Marrow is pretty bland on it's own so adding a bit of butter helped me, and yes, I usually always use salted butter or add salt to unsalted. Excellent video, thanks so much!

I'm so jealous that you have access to jowls. It's like bacon made out of fat...and practically only fat. FAT BACK IS AMAZING. I cut it into french fry sized strips. Cook low/medium in butter just enough to get it hot and to make the pork skin edible. I call them fat fries.

I'm liking the sound of the butter/tallow combination. I have the wagyu tallow and it's so soft and fluffy on its own. Makes a nice gentle skin creme although with a very light beef scent. I'll have to figure out how to change that 😂

27:30, when making a Beurre Noisette cut into small cubes and melt low and slow in a small sauce pan, no need to stir. Take off the heat and let the bubbles settle if you want to check on how the proteins are browning. Alternatively wait for a smell of hazelnuts ("noisette" in French hence the name) then take off the heat, add salt and herbs (if you're that kinda carnivore) watch for a little spitting when adding anything to it.

Anita, I don’t know if it’s just me or if you are seeing a difference but you are looking smaller every video. Something must be happening whether the scales show it or not. You look GREAT! Slim and trim young lady!! Thank you for all the ideas. I think tallow would be very difficult for me. I did make some brown butter bites. I’m also having trouble with butter but I can handle a butter bite when frozen. I do want to try the hog jowl fried. I’m a Deep South southerner and hog Jowl has been used a lot, but boiled with greens! Yummy!

Yes, Dr. Bright is exactly why I am going through this experimental 80/20 protocol. The temporary tracking of macros is for me to get a better handle on what that looks like. Love Dr. Berry too, but there are reasons that some of us do have to follow that adequate protein high fat mode rather then eat until satiated. Appreciate your thoughts and thanks for the comment!

Great recipes. Just some advices that has helped me in my process of desinflammation, I eat some snacks of cocoa butter no sugar of course, that are so good for women hormones, also I try to use ghee mixed with himmalayan salt, better than simple butter. It has lactose and the salt might be artificial.Also I make colageen candies: 25 grams of unflavored gelatin dissolved in 150 ml of cold water. In a hot pot with 150 ml of water dissolved some strawberry juice or any keto fruit. You can add stevia if you like.Then mix the dissolved gelatin with the hot water and fruits, mix very well until it dissolved. Put the product into silicone molds, after that , refrigerate for 2 hours. They're good resources for our bones, joints and skin . I hope this recipe helps you.😘

Salted butter is made of milk fat, water, milk protein and salt. When heated some if not a large proportion of the water evaporates such that a raw stick doesn’t lead to a full 8 tablespoons. Algebra may appear wrong for that reason.

I was eating 2 Tbsp of butter, 4x a day. 2 Tbsp of that was right before bed. Started using tallow for part of that. Thanks for showing us what you do!

I made some brown butter bites tonight. I have to meal prep or I will not succeed. I went from my heaviest at 250lbs in 2018/19 to 225lbs summer of 2020. September of 2020 i started Keto. Stuck to it for an entire year and got down to 175lbs. Then I went on holidays and it was a hassle to cook a different meal for myself so I cheated. And it’s been hell to get back on the wagon. I’ve gained back up to 205lbs and I swear I will not let this dictate my life. I have serious back problems and I know if I get my weight down it will make a huge difference in my pain levels. So it begins. This is my life. I love this way of eating and I know once I get going it will be easy to stay on track. I have some young living essential oils that are safe for food use. I’m going to maybe try some of those if regular brown butter just doesn’t do it for me. 😂😂😂 Thanks Anita! I seriously feel like I know you from somewhere. LOL.

Update on my duck fat brown butter bites - they are AMAZING. 400g westgold salted butter browned then added 100g duck fat. Soooo delicious. Highly recommend you try them Anita! And thanks for all your videos - all very helpful and the video editing is top notch too

Because my weight loss had stalled, I was on a three day fat fast when I pulled up your video. After watching this I made the butter/tallow bites. Delicious! They seem lighter than the 100% Butter ones. Less 'rich' perhaps. A great use for the tallow I save. I would never had thought to combine them, so thank you for the tip. Day three, I saw a 3.2 lb. loss.

Watching again also just ended Fat Fast with great ending G66/K5.1. I first render the fat might be protein on skins and cell membrane. I am skating here on ice I am sure hasn’t been researched fully but protein is a stop to Autophagy. My favorite fat is rendered from bacon . Maybe I am sick of it but Irish Amish still butter isn’t as pleasing. People have personal rules and also personal ones they ignore. I drink tea all daylong knowingly with minimal carbs in the leaves. I am 80 so in the Alzheimer’s range I just really want to keep my brain.

My local grocery store, that has a real butcher in the back does not carry Suet. If you can believe it, both of the men working there did not even know what suet was. I had to spell it for them…they still had no idea. And I live in Los Angeles! So I found a great place online and ordered it. Cannot wait to try your recipes. Thank you Anita.

Anita, what a great show. I wanted to share this information. Dr. Ben Bikman started he uses silicone in his home for cooking. He had done the research and felt it is safe. I had wondered if it was ok. So, like you said it is up to each person to use it or not. I have been looking for macros on beef marrow. Thank you so much for the information. I take my rendered fat and pour on a tray lined in parchment paper. I put it in the refrigerator. When it is solid I cut it in squares with a pizza cutter. I have been thinking about sprinkling can't on top . I the bag it , weigh it and write grams on sandwich bag. That way I just grab my candy and enter the number in the cronometer app. I love how you explain everything do well. 😘

Suet (intra-abdominal fat from around the kidneys) should have stringy membranes and connective tissue but NO meat. If it has meat on it, its subcutaneous fat trimmings

I like to cook out moisture from fat that comes from an air fryer or making bacon in the oven. It is not always as moisture free as pan fried fats. This is only necessary if there is a little liquid developing at the bottom when it cools. Correctly cooked fat that keeps is all the same color and texture.

Great video Anita. I personally enjoy tallow with bone marrow (in fact if you add a little honey to the mix you can make mini chocolates 😉). Bone marrow is great whipped too, like tallow. Outside of fat fasts which I don’t do (as I was advised that overeating fat can reduce Vitamin D levels etc, and personally experienced that myself) I do like beef suet crackling with beef slices as mini bites. These are delicious and vary satiating once you come out of a fast.
