Dried pasta was created instead of fresh exactly because it made it a food that could be kept a long time. It doesn't require preservatives. Commercial "fresh pasta" or stuffed pasta do require them. As to taste, it doesn't really have an effect and depends on the quality of ingredients. Italians eat lots of dried pasta despite having the option to make it fresh. Fresh lacks the same el dente texture you can get from dried, but both are great.

If you figure out how to produce homemade pasta on an industrial scale and still be able to make it cheap enough for the average consumer you could become a millionaire. Back in the days, they did add yellow food coloring to give it that wheat or that spaghetti / pasta noodles. They haven’t mentioned anything about the other asses that they put into their week make more faster to stretch the product as well as the yellow food coloring to give it. Look..
