Made this today thanks for the recipe , turn out perfect , I’ll soak it a few times before Christmas, i think I may make a creamy cherry brandy sauce on the side 😜 , I was able to find browning sauce easily here in Toronto Canada due to the very large Caribbean community, thanks again

Well Candy, in Jamaica, for a pound cake, we use 6 cups of soaked fruits, then coarsely chopped in blender. Hope this helps. Merry Christmas.

you can cook your fruits in wine or rum the same day, you won't know the difference. trust me and you can try it.

Made this exact recipe this afternoon... into tonight. Dec 2020...and I tell you, the entire level of the house smells like Rum Heaven!!! OMG Yum! Thank you so much for sharing this a writing ot the recipe. It's slightly different than my mother in laws and it's just magnificent!! Made 2 jars of browning before I started and it's Black! :-) My husband and I still laughing at the Danish Butter Cookie tin filled with sewing supplies. Ha ha ha ha ha We both had that growong up. My hubby grew up in Port of Spain..I'm from Belfast Northern Ireland...we met in Canada.Funny thing is that we BOTH had Granny's that had sewing box "tins"!! Brilliant 1 cake recipe. There is now specific way to soak fruits you put the fruits in a glass jar and pour the alcohol or non-alcohol juice on the fruits days or months or even years on the fruits and let it sit!!

Made this morn'; batter extremely thick...!!! Did not "pour" at all. Maybe should have added some alcohol to the batter???? Did not get dark probably 'cause I used molasses. In the oven now.

mine gets eaten in a couple days and that's only because I hold my family off 😃 I never got to have it "cure". I also add some red wine to the soak (got that tip from my sis-in-law).... really nice.

May I use molasses for the browning?????? I love sorrel...!!! I make sorrel, too...with rum...LOL. I watched a black cake recipe where they added sorrel concentrate to their marinating fruit. I'm going to add rum & brandy to my fruit. Marinating my fruit today: raisons, currants, cherries, mixed peel, cranberries, prunes, dates; adding 2 bay leaf, nutmeg, cinnamon stick. Then rum & brandy; let this soak forever, process then use in YOUR cake recipe. What do you think?????
