You are such a caring lady. May God continue to bless you and your family. Where I live, I don’t know of anyone that would do that. We lost everything when the neighbor had a huge tree cut down by people who didn’t know what they were doing. The tree smashed through our house while we were in it and hurt my wife and my youngest son. We lost everything. It was in the paper and NOBODY offered to help us at all. We have no family here and the family I have wouldn’t help us. (We’re not close, long story). God bless people like you that will help others out. Thank you for being you.

I love these videos, my son was born at 27 weeks these videos got me through the nicu stay and helped me save money and have meals easy to throw in the oven when we would come home at night from the nicu…. When we got to bring our son home it was a life saver to have meals in the freezer while dealing with a baby on oxygen and house life

We only got one picture ❤. She shared the picture in a recent video. I shared the picture in my IG Stories. I filmed this video a few days before she and her momma came to visit. It was a wonderful 3 or so hour visit. I gave them the animal and farm tour. We drank tea in the kitchen. And we chatted up food, farming, and lots of KZbin. 🎉❤🎉

I Truly Thank you for fixing those extra meals for other mothers/father's that may need them in a hard time. I have been dealing with sepsis for 4 years and we have a momma's lasagna club that makes meals just like this for family's that need a little help like that. And let me be the first to tell you they are truly a blessing. Because there are days I'm unable to lift my head off of the pillow. So again I Thank you for that a million times over!

@@atdepaulis I wish I would have done the freezer cooking when my older two were in all their activities. I did have a rotation of 30 minute main dish meals and several hour+ oven meals that I could have cooking but that was mainly for winter time. Instant pot was super helpful with my youngest and I did not have a freezer.

Those Dollar Tree metal paper towel holders are great for your canning jar rings. I've got two full and I'm going to get more. When not in use I store them on the paper towel holder so they're ready to go. Love them.

The second squash you bought is called “butternut squash” in the UK. I buy these all the time and make soup (I just add 1 potato, 1 onion, stock cube and seasoning per butternut, boil all together for 15 minutes or until soft)blend until smooth, so nice! They also make great roast potatoes which I batch cook and freeze. When I want them for a dinner I pop them in a hot oven straight from the freezer for 15/20 minutes depending on size and they’re all done. I batch cook differently to you, I will batch cook 20lbs of potatoes into mash or roasts or wedges and freeze in portions. I also batch cook bacon, sausage, pies, tray bakes. I prepare pasta in a basic tomato and pesto sauce and freeze that in portions. When we want to eat it the individual can then choose if they want bacon, sausage, roast chicken, cheese or something else added to it with salad and garlic bread. 😊

I love the deeper aluminum pans. Because when frozen they have a little better ability to stack and not slide after frozen. Plus when heating they don’t boil over and cause a mess!

East meets West! Two of my very favorites. Cooking with total abandon and gardening. Now if you two would take up fabrics and yarn work...well, that would be heaven wouldn't it. I imagine you and Becky had a lot to talk about and had lots of fun. The pears turned out so pretty. I have really enjoyed all the processing and getting ready to start freezer meals. I have the digital pressure canner now, but the freezer seems to be taking a scenic route from somewhere. I am so ready.

Freezer Tip: I use a pair of cotton gloves to help keep the cold off my hands when I am rearranging the freezer. Helps me. Hope it might help you.

Just my opinion after twenty-five years of canning fruit on my own and twenty years of helping my mom and grandma before that, but almost every fruit except pears is good with a light or medium syrup, generally medium really, unless you are a very low sugar household or know that the fruit is very sweet. Since the recommendation is to do slightly underripe pears for canning which are not very sweet, and based on experience, I would recommend a heavy syrup. When I was an adult and got married, we tried light syrup the first year, because I thought we were going to be all healthy and everything, but we didn't like it and we ended turning it into pear sauce with more sugar and some cinnamon, and medium syrup the next year and that was okay, but it wasn't a hit, so again more pear sauce. The next year we ended up with a heavy syrup and it was good. Extra heavy syrup is always too much for us, it's basically pancake syrup minus the maple extract. Just canning in water is unappealing and I feel it always discolors after about 6 months even if it has been treated with a lemon juice or citric acid bath. And if the fruit did not have as good a flavor as it should have to begin with it is not going to taste any better. I've also tried using honey instead of sugar, when I had kids in grade school, again to be healthier, and it's just a real pain in the neck to work with. You end up with stickiness all over the place, including the jar, combined with just one swipe to get hair that has come loose out of your face and then trying to get your fingers out of your hair. Only it's never one swipe, but you don't learn that lesson because you are frazzled trying to keep an eye on the kids (and I only had to deal with two underfoot) and get everything done in the kitchen. It takes a lot longer for honey to dissolve into the water for the syrup when you just want to get on with it and after the second or third time doing it, you are just so over it. It eats up time you don't want or have to waste. I don't recommend juice unless it is from the same fruit you are canning. Apple juice will alter the taste of the fruit, especially softer fruits like pears, peaches, apricots, and nectarines. Plums, cherries, and grapes hold up well against apple juice. Pineapple should only be canned in pineapple juice. Syrup alters the taste too much.

Hey Jamerrill, I was thinking that if the new hood is steel, you could get a set of magnetic timers to stick up there for your canners so you don't have to use the one on the microwave. Also, they could maybe stick to the sides of your roasters too. Great videos always.

If you remove the seal it shouldn’t build up pressure when water bath canning in the pressure canner 😊

You probably know, but don't stack your jars in storage. You could have a seal failure but due to the pressure from stacking, it could reseal after allowing air inside. You might not taste anything off and still get very sick. Edited to add: I'm not sure, but even just stacking them while waiting for them to be put on the shelf could be bad for the seal
