I know a guy that spent 30 years as a Navy cook on ships. 16 of those on a carrier. His kitchen is set up like a ships kitchen. Large griddle, large grill, 8 burner gas range, triple oven, walk in fridge and freezer, etc. Its impressive.

Also, since you asked about frozen potatoes, have you tried the Ore-Ida potatoes O’Brien? They have the peppers and onions already in them and seem to work nicely in a pinch, but they too still need seasoning...

Never understood why people crack an egg into a cup to just put it on the skillet. Why not just crack it onto the skillet?

Hey thanks for watching. I always crack into a glass or clear plastic cup just in case there's shells. It really isn't necessary it's actually a thing people do in baking bc if you crack straight into white flour you might not see the shell. Also when I set up my prep tray to walk out to the griddle I don't want an egg rolling around or rolling off the tray.. I've lost a few eggs that way lol. But it's not necessary I've cracked it right in the griddle before, I think I did it in my egg McMuffin video. Thanks again for watching.

Try using ore Ida mini tatertots. They start breaking up quickly and get crispy. I've used them in my skillets scramblers for a while. Tiny chopped peppers and onions with those are perfect. All in tallow of course.

hello buddy, I work as a chef/sous chef at a restaurant in the UK, we watched some of your videos on these types of griddles, decided to get rid of our classic 5 by 5 feet bbq grill and swap it out for a flat top similar to this. Some of your videos helped professionals of the trade invest in equipment. Thank you very much my friend for your help. A quick tip on the scrambled eggs, it could be worth investing in a flan ring, put it on the griddle and cook the eggs within the flan ring, they still look good. all the best 👌👍

Griddles are the bomb! I had a 36 inch and sold it cause I barely use it, but when I did use it I cook a lot of food in it and loved it, my next griddle will be a 2 burner as I think that's all the space that I need.

When I did my eggs I used a small cast iron skillet that I set right on my griddle. Worked great for my over easy eggs.

Oh ya I used to do that a lot too until I saw someone do it slower. Seems obvious but didn't click until I saw someone else do it. Hi Nada, I've never used one over wood but I know they sell some for Webber charcoal grills. That might work over wood. Also Steel made is a company that makes all different types of custom flat tops.

The BEST potatoes for homefries are pressure canned diced russet. The canning process parboils them in huge batches, the high heat of the canner caramelizes / slightly browns the surface and since they're shelf stable and room temperature they fry up fairly quickly compared to frozen. Just need to rinse off all the starch and let them drain before frying.

I'm going to have to look for those and give them a try. I think some people are hesitant bc they're canned but I've definitely had some good ones. I'll def give this a try and make a video about it. My mother always used frozen potatoes; they tasted good because she fried them in butter but, by the time I was 14, I realized that they needed to be fried for a longer time. So I took over frying potatoes. Once I moved into an apartment and started cooking for myself, I quickly found that using fresh potatoes was much cheaper and tasted MUCH better! Waiting to salt them until they're halfway done is my personal hack...

Cooked a breakfast this morning on my blackstone for the first time. It was kind of a dumpster fire. Got way to hot!

That is definitely the main issue I had at first. I burnt a lot of eggs. My recommendations would be. 1 Start on low 2 Don't be afraid to turn off a few burners if need be 3 Get an infrared thermometer asap. You just gotta know what temp you are cooking at. 350 to 375 is ideal. Medium on a lot of these things can get up to like 450 which is way too hot for breakfast.

I bake a bunch of potatoes then put them in the fridge and the next day or two I have cold hard fully cooked potatoes I can shred for hash browns, dice for diced fried potatoes or make French fries etc. I prefer them over frozen potatoes personally.

Unfortunately once my great grandfather passed we stopped meeting so I haven't been for years. Walmart has some great potatoes both in the fresh and frozen area that are washed, seasoned and in bags. Some say microwaveable but is them on the griddle for breakfast and other things. . They are awesome. They are called 1) Steamables Red Potatoes 2) Roasted Red Potatoes in Garlic and oil for sautéing grilling and roasting. They make for perfect hasbrowms. Small hint. When you have 20 seconds left before you plate your hash browns . . Put a tablespoon of maple syrup over them and toss once then plate quickly. Don’t let the syrup burn off. #Awesome

I live in Canada and they aren’t available up here until “at least” mid 2022. Had it shipped from the USA. I’m an ex award winning chef and you’ll love the Maple Syrup trick, it was very popular at my restaurant, especially on fresh homemade cooked hash browns. Don’t need much. . . Just a bit and don’t cook it off. Splash it AND dish it. ENJOY and happy cooking. Kevin.

Great stuff my friend! Hey why does the food I cook on our blackstone get black stuff all over it? I wind up with really dirty looking food. I seasoned the griddle correctly and I clean it after each use. Also, how do I stop the rusting? I do keep it covered all the time. Thanks!!

Hi, and thank you I'm glad you liked the video. That's weird that the black specs are coming off what type of oil did you season it with? It usually doesn't matter what oil it was but I'm just curious. I get black specs whenever I dont' clean mine well enough. So I would suggest scrapping it down really well then putting it on low and giving it a good cleaning with some water and a old towel. If that doesn't work maybe try to get a pummace stone and rub it all over the griddle to smooth it out and lift up any seasoning that is coming up. As for the rusting I get that a little bit too, after you are done cleaning it do you put a thin coat of oil on for protection? That will usually help or I have also seen people put parchment paper down after they are done. I have not done it so I don't know if it works but I've seen people do it. You final resort option is to sand the whole thing down and reseason which is kind of a pain. I'm getting ready to do that with my 4 burner camp chef and will be making a video on it if you end up going that route.

I like freeze dried shredded hashbrowns. Its what we used at Perkins when i worked there back in the day. Just rehydrate when you plan to cook. One tiny carton is enough for my wife and i with two toddlers.

Hi Jeff. I usually use Canola but I've used vegetable oil as well before and it worked fine. Sometimes with eggs I'll do a small amount of oil along with butter. Supposedly the oil keeps the butter from burning. I've had pretty good results with that too. Thanks for watching and commenting.

Have you tried the canned potatoes in the vegetable aisle? I make them all the time on my Blackstone and they are as good as my granny's were. They don't take as long to cook as peeled or frozen potatoes. Hit the sub button to by the way. I was reluctant to try the griddle thing now it is all I use.

Hi Mike, Yes I have used the canned ones. I used those in my camping breakfast video and I was pleasantly surprised. Especially for how easy it was. Ya I use my griddle all the time to and if I wasn't in Ohio I'd probably use it year round. It's just easier and it keeps the kitchen clean. Thank you so much for subscribing, I really appreciate it. Obriens potatoes...any brand but Wegman's...IMO, Wegman's are 99.5 percent potatoes 🙄 Hard to find the peppers.

Why would you use frozen potatoes on a flat top grill? The whole idea is your cooking food? I have home fries on a flat top for over 25 years every day as a line cook and you chop up whole raw potatoes and you cook them and add seasoning usually salt and pepper and onion depending on the restaurant but I have no clue why you would use a frozen bag of potatoes that doesn't make any sense. Flat top at 425° you can cook home fries in a matter of minutes and they come out awesome! I usually add salt pepper and paprika

Hey thank you so much. No real secret with pancakes I just follow the box instructions but I add a little less water then it says. Also the box says to let them sit after you mix it so I make sure to do it first. I buy the buttermilk Kroger brand.
