How to Cook Squirrel and Rice in the Instant Pot! Here is a great new wild game recipe for your instant pot. Simple and easy to do and you can substitute with any meat like chicken, rabbit, duck, quail, pheasant, or any other wild game you like.

Recipe:
1-2 Squirrels (Can be substituted with another meat)
1 1/2 cups Rice (brown or white)
2 1/4 cups Chicken broth
1 1/2 cups Celery
2 cups Carrots
1 envelope of Dry Union Soup Mix
1 can of Cream of Mushroom Soup
Cook on high pressure for 28 minutes

I assume you know about squirrel gravy right? Fried squirrel and white gravy with cathead biscuits was always my favorite the squirrel gives it a great flavor. Then their is squirrel and dumplings. I used to bake them with BBQ sauce too. This insta-pot one looks like a great idea for tough squirrels though will have to try it.

Thanks! I'm doing this today. Changed a bit and added a shot of Wooster sauce, pepper, fresh onion and garlic (sauteed with squirrel), and a can of mushrooms and left out the Lipton Onion mix, and switched out the brown rice with long grain wild rice.
