This is so delicious! One trick for the frying fish is that I always use the lid as a shield, in case there's any oil coming at me! I loved the recipe, this would go very well with some fresh salad on the side and some beer ♥

I know your comment is three years old but putting the lid on traps steam and when it condenses into water and drips back into the oil, you've got a recipe for disaster🤣

Thank you Marion we just followed your recipe using a whole red snapper and it was tricky moving the fish from side to side but we did it. We measured our oil using water first placing the fish in it and we figured we needed about 5 cups of oil in our Wok. Cooked the food on a gas stove with fire extinguisher handy, just in case but we didnt needed it. Either way Thank you for the video and Recipe!! and oh yeah the fish was Delicious and crispy!!

Lovely. All Sweet and Sour sauces in the Philippines have ketchup. I have done this with Barramundi and Tilapia! Awesome dish and very simple recipe.

even the chinese in china use ketchup. the original ingredient before the invention of ketchup is hawthorn berry paste. but i dunno where you'll find that, i can barely find hawflakes these days lol

Yum -- been trying to get hubby to try whole fish. I recall the best Striped Bass whole with a 3 pepper sauce at a Thai place years ago. Always wanted to copy that recipe. This is close. Snapper would be my choice.

Our sweet and sour sauces usually have a tomato base, so I'm surprised adding ketchup is a controversial thing! Very interesting to find out how different parts of the world prepare this dish

Hi Marion, great recipe, it looks delicious! Could you please show us home cooks how to do a version of the salt-crusted fish stuffed with lemongrass and other herbs? I don't have a BBQ but thought baking it under a broiler could work... maybe? I saw this a lot while in Bangkok and it was one of my favourite street-food dishes!
