A great tasting sweet and sour fish (糖醋脆皮魚 tang cu cui pi yu) requires time and effort. This dish is a real party piece - a whole, delectably crunchy fish draped in a fragrant sweet-and-sour sauce, scattered with a garnish of brilliant red and green. It's a popular banquet dish in Sichuan, and is often the centerpiece of a dinner out with friends.
Chef Chen specializes in Sichuan(Szechuan) Cuisine and won the Gold Award at the NTD's International Chinese Culinary Competition held in Times Square.

了不起！ 傳統經典的濟南菜「糖醋鯉魚」的技法完全都展現出來了。 從魚身片肉、魚尾劃十字刀的古典刀工，到先拍粉後掛漿，淋油、復炸等技法，完完全全地正統派。 以鱸魚代替鯉魚，沒了小刺，更適合現代人的食習。 加了泡椒，稍稍地突顯大廚出身四川的特點，在經典上表現了個性，已經是藝術創作了。 芡汁的透明度稍差一點。可能是因為大廚先將玉米粉與醬油等調料兊汁後再加熱，而非傳統的先煮汁後掛芡所造成。 但無論如何，小瑕不掩大瑜，依然是一道無與倫比的佳作！

Simple just Do Deep fry tool, on this video he use wok pan, so you can do this method with Deep fry tool, and if you said "OMG 1 Gallon Of Oil" yeah that method off cook this called DEEP FRY
