Joanna Zeiger is a former professional triathlete, Olympian and Ironman 70.3 World Champion. In other words, she's not only crazy fast but she's spent countless hours training and running.

Nicely done... I remember doing this back in the 80's when the only choice was a hand full of power bars (actually the brand name WAS "Power Bars" that evolved into today's generic term for health bars). The key difference between what we used in the 80's vs. your version is that we added colloidal minerals for the concentrated trace minerals instead of just salt with water. Plus, I used PASTEURIZED fruit nectors to save time and the effort of adding water to the mix... and... it made the amounts used MUCH more consistent because we would know exactly the amount of fruit nectors to use vs. fruit (since fruit sizes vary). Although it was always good to know how to make jels with real fruit because traveling with glass bottles of pasteurized fruit nector was a real pain...if not impossible when traveling to foreign countries to do Ironman Tris. Since those days, what I have realized is that if you can test out the various taste differences of potential jel flavors by creating smoothies first. Then, convert the smoothie recipe into a gel by adding the malodextran. Smoothie recipes are not a big of stretch between what can be used as jels in some cases. Now, if someone can come up with a way for a jel with a delayed release of the complex sugar release into the stomach without harmful side effects (such as, swelling - especially of the brain...as first attempted by a 80's (no longer existing) product called ProHancer), that would be a plus. But...So far, the most natural source of a "delay" (using the term very loosely) is water melon or cantaloupe. And... on that point, I have found a good pre-training/event hydration process of eating melons before and using home made jels during.... that makes a good combo of natural (i.e., preservative free) hydration process.

If kept in the fridge, how long do you suppose these gels would last? My concern is the banana going bad. I love these gels, taste good and really help me get through those tough workouts.

What a great idea. Thanks. I just posted a video (Speed Tip #7) on how I carry my gels and made reference to the taste of commercial products. With your idea, a person could alter the taste. The delivery method of a homemade gel is not as convenient as disposable packets, but having a gel that's easy on the stomach is worth the extra work. Thanks again.

Well, if you start out by saying that all the gels you've tried leads to an upset stomach, then what would the rationale be behind making your own gel with one of the primary ingredients from the commercial gels (i.e. maltodextrin)?! Makes absolutely NO SENSE!
