Salmon is one of the more difficult fish to fillet for sushi and sashimi applications. The soft delicate flesh gaps easily if handled too aggressively, so it's a challenging fish to train others. The use of a hollow ground slicer instead of the traditional Japanese deba knife is a much easier approach in terms of speed and minimizes handling.
Over the years, I've used Japanese and Western filleting knives to test what is the most efficient way to fillet salmon. And quite honestly, I believe Western style knives (8" fillet blade and hollow ground slicer) is superior. Some Japanese chefs may disagree, but I have seen salmon processors cut salmon like the wind with minimal effort compared to using Japanese style blades. However, after filleting, the use of a Yanagiba is still best for cutting nigiri or sashimi pieces. So a combo of 2 style is my preference. Check out my Udemy Course to learn more!

Loved how he scraped off the meat from the bone. I often see other vids where they are just throwing the whole spine thing away. Felt like a waste to see it still seemed to have so much meat. But this guy here. Thank you for scraping it off.

It's really nice to see someone like yourself that has first class knife skills. I'm in Northern California fishing for salmon and at the cleaning table I've seen people with NO skills at all butcher salmon so bad it looks like they filleted them with a chainsaw.

Thx Crowman, there's so many ways so fillet salmon. I'm sharing one that is very easy to learn for new comers. I know what you mean haha, I've seen some pretty bad salmon cuts, but to be fair, salmon is a harder fish to fillet when starting out.

It's cool to see how many techniques there's out the to prep salmon😍nothing beats fresh salmon. (By fresh I mean it's been caught in 2-5h prior to cooking)

First video I have seen that explains freezing is needed to kill bacteria, Great Job!. Any fish that goes in fresh water needs to be frozen before being eaten raw. The salinity of ocean water does not allow the bacteria to exist so any bug you can get from drinking the fresh water can be inside the fish from fresh waters. I see all the people like bear grills that teach people to eat salmon raw from the water doing them a great disservice. Also you did a great fillet tutorial.

I like the video because it tells you useful tips that a beginner may not think about. Eg. Safety tips like wipe the exterior of the fish so that it doesn't slip while cutting - safety tips.

No need to, just use the knife edge to scrap off any scale or parts. Try to avoid water contact is best

Very interesting the paper wrap before freezing, next time I will fillet I will try it for sure. I like your way too of cutting through. Salmon can't be fillet easy the usual way (like normal fishes) . I still experiment with order and knives. I get the best results by starting from tail, but the general rule, the less we Cut, the less we abuse the fish,so you finish the first fillet only with one move. I will try it for sure

Good Luck! Hopefully this was helpful. There's so many ways to fillet a fish and every chef is different. Personally, this is the fastest and most consistent way for me to teach someone with no experience. But most processors don't use this knife.

You can use a combination of deli paper and paper towel. It helps prevent freezer burn and soaks up the water when you go to defrost. Keeps well in the fridge for 2-4 days depending on the quality you started with.

Watching that sawing motion and effort, it doesn't look like a particularly sharp knife.Especially as the fella changed the knife later for one which appeared so much more effortless.

this is honestly the absolute best way to fillet any fish. except for the fish with really hard rib cage. then the scoring method with a flexible blade is more ideal.

Nicely done video!! Thanks for sharing. I assume you live in an area where obtaining wild Chinook Salmon is difficult and quite expensive. I am fortunate to be able to catch wild Chinook salmon 6 months a year. I have not consumed a farm raised salmon for more than 20 years because of the conditions these fish are raised in, the crap they are fed, and the chemicals that are used to prevent obvious infectious diseases.
