Chanterelles cooked in butter added to fettuccine alfredo. So good. When I was a kid I hated mushrooms for the texture but when I tried chanterelles it changed my thoughts on all mushrooms. I eat all kinds now. It matters how you cook them. Loved your video. I never knew about winter chanterelles but have seen them and couldn't identify them until I saw your video. Thanks for this video.

Really nice videos with Lee on mushrooms and such a beautiful private woodland! Such places are really rare nowadays. Would love to see more of those. I'm from Germany and been picking wild edible mushrooms for quite a while too. To the topic of cutting or "ripping" them out, the Swiss or the Austrians actually did a study, which confirmed that it really doesn't matter and makes no difference. Important is to cover up the holes again so the mycelium won't dry out or will get contaminated.

It’s so interesting to go to the forest and foraging for mushrooms and so nice to find some golden and winter chanterelles. They’re also very popular mushrooms in Sweden and I’ve found them so much too. Thanks for nice video.

I used to dislike mushrooms, partially for the flavor, partly for the texture. Then I discovered that if they are cooked correctly, they are amazing and go well with so many things and now I love them quite a bit. That being said, I live in the Colorado, US and usually eat white or portobello from the store, with the occasional other varieties when I have the money or the right dish...don't know how much of an impact that has, but I bet it makes at least a little difference...

I find a lot of different species, but unfortunately not Chantarelles. Even in beech and oak forests I don't find them. Maybe the trees are too young. I have only found them under an old oak, only a few of them. Laccaria amethystina I do find a lot, thousands in beech woods. I also find hundreds of Scarletina Boletes, on beech, on pines, on firs... Nice to hear what is said about the different species, about how to preserve, cook, etc. 👍

Picking in such as Hampshire and Dorset is a bit earlier. If you;re north of Watford Gap, give it another week or three. Look for a few more types, such as what we call "Bluies" (did I spell that right) in Derbyshire that are out about now, very nice though mushroom picking here is something Hobbits in the Shire might envy so good luck. That said, some bloke in the pub might even be your best bet and I almost guarantee, that same bloke probably has a trout or even some venison you can buy cheap too. But then I can't walk far myself, maybe I'm just slow, October is like a race here, where first come best served though I have found people round here are not greedy, even when they got ready set and went.

Great video! A few more identification tips wouldn't have gone amiss mate, wouldn't want novices picking False Chanterelles, Satan's Boletes and Lilac fibrecaps ☠️ Can never be too careful! Keep it up though, not enough good woodland foraging and mushroom videos out there at the moment - this is a step in the right direction 😄

Mushrooms and chestnuts are 2 miles apart near me and after 6lbs of chestnuts the mushroom patch had, and I counted them as we slowly drove past, 25 cars. Sadly, we do not have both but fried chestnut, onion, bacon an apple did taste real good.

I have read scientific papers that say mushrooms are the fruit of a much larger organism than appears on the surface. So...take the fruit and sever the top roots but the host organism lives on 'undaunted.' My first wild mushroom memory comes from hiking a trail in the White Mountains of Vermont and meeting a French hiker who had collected local golden chanterelles. He was very familiar with them from France and shared some with us. With his help, we gained the confidence to take a few we found on later hikes. I LIE!...our family harvested a type of mushroom called a 'puffball' in Central Upstate New York. They came up in whatever size they chose and were generally spherical and mounted on a short stem. My mother sliced and dipped them in beaten egg and then soda cracker crumb and fried them in butter. Epicurean! Later in life, I have done the same, whenever I could find them!

Great video, is there any chance of a accurate identification video ,its off putting foraging for mushrooms because you hear that every edible one has a piosionous look alike it would be good to see comparisons so people can confidently identify edible ones .

The washing mushrooms thing, I can't remember where i saw it, but chefs ran a side by side, with mushrooms brushed clean and mushrooms soaked and washed clean, and there wasn't any difference in the cooked product. Do what makes you happy of course, but mushrooms are dirty lmao so I will continue washing them. Edit: love a mushroom cooked. Not raw. Lol

My Daughter will not eat mushrooms. I had the same feelings for them when I was a young child but I got overit by eating omelettes with mushrooms in. I always think as we get older our tatstes change......maybe yours will Dustin?

May I make a suggestion? Moving the camera about too swiftly messes with the eyes - no focus and uncomfortable. Could you focus more time (say, 10 seconds +) and a zoom-in to whatever object you want to highlight, then backing away for a broader view. You have so many talents which I admire and appreciate.
