This is my Patti Melt packed with bone marrow sticky onions, Swiss and American burger cheese with 3 types of beef making the Patti delicious. All wrapped up in sour dough bread. Lemme know your thoughts in the comment box below.
I use 1/3 Short rib, 1/3 Brisket and a 1/3 sirloin for the patti and I grind it twice once course once medium..

I lol’d at “ USA burger cheese.” It’s ok to call it American cheese....we know it’s not cheese, you know it’s not cheese, but it is kinda great. Thanks for another great video Chef!

@@randomrecipes5007 sodium citrate is really fun to play with. You can make a cheese sauce without a roux if you need to do something like keto or gluten free.

Only thing i would do different is i would cook the onions longer to make a jam however with the cheese it also has the soft texture Morrison sells sour dough bread.

Initially, I felt a little wave of snobbery rising in me when you broke out the cheese singles, I mean, why not something amazing like mature Cheddar or Stilton? But on further reflection, I think I understand the subtle genius of it. Processed cheese slices are best thought of as like a sort of pre-portioned mild cheese sauce. You already have two bold and punchy flavours in there with the beef and the onions. Three would be a crowd, but something mild, creamy and gooey is the way to marry the two strong elements perfectly. I'd have messed this up by going OTT the cheese!

This is pretty much how I do my burgers.. but I use the Hokkaido dough to make burger buns.. Same as with the Bao.. Smash burgers all the way.. OMFG 👌🏻🤤🤤🤤

I've had a few 'patty melts' here in the US, and all have been unpleasantly greasy. This one appears to have loads of flavour though. *begins sourcing ingredients*

You should never season your beef before unless youre cooking it right away. Otherwise you end up with beef sausage for the leftovers (if you have any)
