For the crumb topping:
⅓ cup all-purpose flour
2 Tablespoon granulated sugar
1 Tablespoon brown sugar, packed (light or dark)
Pinch of salt
3 Tablespoon coconut oil, melted and cooled
For the muffins:
2 cup all-purpose flour
2 teaspoon baking powder
2 large eggs
¾ cup granulated sugar
½ cup coconut oil, melted and cooled
½ cup coconut milk (or your preferred DF milk)
1½ teaspoon vanilla extract
½ teaspoon salt
2 cups blueberry, washed and dried

I wanted to use my blueberries before they went bad and quickly searched for a dairy free blueberry muffin recipe and I came across yours. I just made them but I didn't have coconut oil so I replaced the topping with vegan butter then the muffins I used vegetable oil. They turned out wonderful regardless, thank you for sharing!

Hi Rita! Yes, you can substitute the coconut oil for any neutral oils. Just note that the muffins may not be as fragrant because the coconut oil does provide a lot of flavors and aroma. =)

This recipe is dairy free, and for those that are lacrose intolerant. Lactose intolerance is a digestive condition in which your body cannot digest lactose, the main sugar in milk and dairy products. I hope that helps you, thank you!
