I learned something today. I did not know that you could use cream of tartar, yogurt or sour cream to get a buttermilk substitute. You are ingenious! I always enjoy watching your cooking channel, Mary. Thanks for sharing.

My mom loved buttermilk, my dad did not. One day, my mom had a big tall glass of buttermilk sitting on the counter. She was teasing my dad and she said "You don't love me, if you don't drink that. He chugged it down, and said "don't ever make me do that again." 😄 True love. ❤❤❤

Hi Mary: I have often ran into a recipe that calls for buttermilk but never have any. I would always have to send my husband to the store to get it. After using the small amount the recipe called for the remainder went into the freg only to set and go bad. Now thanks to your help I can make it and I won't have to send hubby out or throw the rest away. I can make just the amount I needed. Thank you for the video and all your help. I tried the buttermilk substitute using full fat milk and full fat yoghurt. The substitute worked even better than buttermilk. I used it to make my cornbread. Surprisingly it came out BETTER! than just using the buttermilk. The cornbread was moister and stayed most for several days after it was made. Amazing! Thank you Mary for this video. I will use the substitute from now on it was sooooo much better❤

Thank you Mary, great information here. I have used lemon juice with milk to make a substitute buttermilk but have not tried the others. I always have cream of tartar in my store cupboard along with bicarbonate of soda as I use these to make my own baking powder and also self raising flour here in England. I buy 16kg bags of plain flour and never buy store self raising. I have recently found you so I have plenty of catching up to do on all of your wonderful content.

Hi Mary,, I make my own buttermilk for drinking all of the time. Have not had to buy buttermilk since end of last year. First, you take about 1 cup of buttermilk that you buy. I add this to about 2 bags of milk (I am in Canada) Mix it and leave it about 12 hours. Next day, I pour this into a bowl, and mix it with electric mixer until large bubbles form, about 30 seconds. I start low and then full mix. Put it in jars and leave in fridge. Never lasts very long. I make it about every 3 days. Always keep back about 2/3 cup for starter for next batch.

This is great! My grandson asked me to bake a red velvet cake for him and I've delayed or for 2 days bc i dont have enough raw cream to make butter. I am planning to make ricotta cheese from raw milk tomorrow so ill take some of the curds and whey and put in a jar to make this substitute. You're a genius, Mary and a very sweet one at that!😙😊 P.S. I did manage to get a good bit of yeast b4 the shelves went bare but im gonna try your no yeast sandwich bread tomorrow, too.😁👍

Hello sweet Mary, Thank you for answering my question about your countertop burner. I did purchase the one you use and I agree, it cooks a bit hot so I have to be careful with it. I've made my own buttermilk for along time as I usually don't have room in the fridge for a quart of it, tho I love to drink it. 7/23/22.......*****Excellent Mary, I have needed this info several times and now I wrote it down in my cookbook and a note inside my cabinet also, and my D. just asked me the other day about this and I said I think it's a Tbsp....that's what I had written down, but we looked it up online and can't remember who's blog, but they said 2 TBSP. and I said no Mary says 1 Tbsp. and I trust her more than any other newbie on YT.....then I explained to her it depends on the milk you use in your area...if you want it thicker after its sets you can add another tsp. that should be enough.....I told her to go to your blog and check it out.....I always tell anyone who ask me anything like this to go to Mary's Nest.....your blog is one of a few that I can remember the name of and I watch a lot of blogs....so you are my first referral..... love all your blogs.....God Bless you Mary for all you do....for all of the newbies, and believe me I am not a newbie, I'm a (GGM) but I still refer to your blogs a lot.....if I have questions or think someone told me wrong.....I give this one a 5***** :) I do have another one to ask you about, but I will do that another time.....LOL .

Hi Mary, I had no idea there were so many substitutes for buttermilk! It’s interesting because I have a buttermilk powder that I just found out about recently and I use it for my dry ranch dip.The next time I need buttermilk for a recipe I’m going to remember the options you gave us. I really dislike purchasing it because the containers are always large and I only need a small amount so I end up throwing it out. I make my own plain Greek style yogurt with whole milk, use half yogurt and half whole milk for making buttermilk.

Could you please do a video about long term storage of our ferments? I have limited fridge space but want to ferment things for my family when they are in season and save them for the winter. Does everything need to be in the fridge or is there a way to slow the ferment and can it for shelf storage?

Hi Mary. How do I thicken my buttermilk that’s left over from making butter from raw cows milk? It’s always so thin unlike the store version I generally use it for when I’m baking bread but I’d like to have it a bit thicker. Can I just leave it out on the counter for the cultures to grow since it was made with raw cream?

So to make buttermilk, Could I use my homemade sour cream, (Made with 1cup heavy whipping cream, 2TBSP Low-fat Cultured Buttermilk, which made delicious thick sour cream😋)? All leading to a continuous sour cream ➡️ buttermilk ➡️ sour cream rotation.

Hi Tammy, Yes, it will keep in the fridge but it may separate back into curds and whey but just give it a good whisk when you're ready to use it. My only concern about those is that they are high processed and the fats and proteins are damaged during the processing. It's better to make homemade buttermilk or a homemade buttermilk substitute. @@jocelyneapter9468 - Hi Jocelyne, That is a great question. When ti comes to coconut milk or cream - yes, you can try to curdle them with an acid such as vinegar or lemon juice. You will have to experiment. I have had mixed results. The other option is to culture them and make a "mock" yogurt that you can then use in place of sour cream in a recipe. Love, Mary

Sandy z - Yes, I think so. I have never done this. But, I would reconstitute the evaporated milk and then add the same amount of vinegar or lemon juice as shown in the video. Keep me posted on how it all works out. Love, Mary❤️🤗❤️

I find this interesting. I don't use buttermilk except once in awhile for a recipe. This is really helpful! I did the vinegar version once but I didn't know you were supposed to let it sit. I like the sounds of the sour cream version, or even the last one. Now I have to go through some recipes..... lol

Homemade buttermilk have the culture's in it ? Just curious !

Hi Harry, Yes, homemade buttermilk as a by-product of making cultured butter will be a cultured product. If you make butter but it's not cultured, you can take the buttermilk that is produced as the by-product and add a tablespoon of kefir or yogurt to culture it. Just leave it in a warm place for 8-12 hours, then refrigerate it. Love, Mary
