Year's ago a friend had a delicious recipe for yum yum bars that used sweetened condensed milk. I didn't want any white sugar in mine so I warmed some honey and dissolved some dry milk into it until I got the right consistency. It worked quite nicely. My friend was impressed that I could make her recipes with all whole pure foods and make it delicious. Just a little trick to share. 😉

Hi Mary. Today I'm learning how to make evaporated milk from your video, because I've decided to begin making my own coffee creamer. I live with my mother of 80 years and she uses evap. milk in many dishes, gravy, mashed potatoes and deserts. She always has half a dozen cans of evaporated. milk on the shelf and I'd like to introduce her to home made evap milk to show her how easy it is to make and to can. I need to find out if home made evap milk needs to be water bathed or pressure canned. For the very first time in her life she made home made strawberry, raspberry and blackberry jams and then water bath canned it all. I just know that when she sees how easy it is to make your evap milk and then can it, she will be thrilled, as will I. It's wonderful how you do ALOT of these everyday kitchen things, which can almost be considered a lost art these days. God bless you and your family, your home and all your comings and goings.

Thanks for sharing. Evaporated milk is used in Halo-Halo which is that combined with crushed ice and various ingredients like fruit, ice cream, jelly, flan, red Asian beans, purple yam, etc. I've had ones with some with all those ingredients and others with just part of them. It is so refreshing in the heat. In the Philippines it is sold at restaurants and fast food places but it's easy to make as well. Daniel's dental surgery went well. They removed some excess teeth and infected ones but left the healthy baby teeth that will naturally fall out.

Thank you this! I’m lactose intolerant. It’s hard to find lactose free evaporated milk in my area. Plus it costs almost twice as much as the regular stuff. I’m going to try your recipe for my next creation.

Hi Mary, Wanted to let you know a more simple way to make evaporated milk. Take whole milk and pour into pint jars, leaving 1 inch head space. Pressure can for exactly 15 minutes. That's it! Easy, peasy evaporated milk. Thanks for the great ideas.

I don't know WHAT they are putting in the canned evaporated and sweetened condensed milk, but it really messes me up when I use them -- and make me VERY constipated. Thanks for making these videos! AND thank you for letting us know that that evaporated milk lasts only about a week in the fridge -- while the sweetened condensed milk can last up to 6 months (but never at MY house, LOL).

Most people won't have luck with this technique do to thin cheap cooking pots. In that case it's much better to reduce in a large frying pan much the same way you'd do a semi glaze. It's better because you have less milk for the same surface area and that means faster evaporation. It also means doing batches and standing over your stove and the trade off is more stirring and less film which is actually milk protein and this is the biggest advantage you can rinse the pan out in between batches so no burnt baked on milk. It's all in if you have an appropriate pan, How you want to spend your time and if it's summer or winter. Not a task for 95-100 degrees outside. :)

I made this today using twice the amount of whole milk, six cups. However, it took much longer to reduce, a few hours. I'm concerned about what I do have now. There was a ton of stuff in the strainer, a little less than a cup- almost looks like ricotta cheese. Do I have evaporated milk? Thanks for your insight. :)

Hi Joshua, Thanks so much for visiting! When it comes to Stainless Steel, I really like All-Clad. It's pricey but it will last forever - and has very even heating since there pots and pants have a heavy bottom. Hope this helps. BTW - Do you enjoy making traditional foods? Hi Lily, Thank you for visiting. Yes, you can freeze evaporated milk but it will become separated when frozen. However, it is can still be used for cooking and baking purposes when re-blended (once it's defrosted, give it a cook shake or quickly run it in the blender). If you do decided to freeze evaporated milk, make sure you use an airtight container and leave at least 1/2 inch headspace at the top, as milk will expand when frozen. Have you ever tried freezing evaporated milk? I have had to freeze various dairy milk items and the .ain change is after a while it may get a little grainy.
