Just tried this for dinner tonight -- it was beyond my expectations. I detest cauliflower, but am trying to expand my palate to worlds beyond for the sake of my keto diet, so I decided to try Dennis' concoction. It was amazing -- my husband, who is not keto, thought it tasted just like regular fried rice, and I did, too. The fish sauce and fresh ginger made the difference, I believe! This video gave me a headdesk moment, I hate cauliflower rice but I believe it's only because I've used the frozen version. This video gave me some ideas using fresh cauliflower and making my own "rice", this way it would maintain some of the texture. Thanks!

The thing with cauliflower rice is to not overcook it - otherwise it becomes mush. I've used frozen cauliflower rice with really good success to make fried rice. I'd say- give it another shot 😂

I juts saw this video...love the narrative portion. Love the recipe, I've made my list for today's dinner. I will replace the fish sauce for Mrs Dash Salt Free Spicy Teriyaki marinade instead. One of the best tips I ever got ... keep ginger in the freezer (in freezer bag). It grates super easily and lasts a long time.

Really good actually. Just have to be careful not to overheat it so that the cauliflower becomes mushy. You can also use frozen riced cauliflower to make it fresh - super simple

Another great thing about cauliflower is that it’s cheap af and abundant I cook cauliflower fried rice with very very little oil for super low calorie And I get to eat a massive meal Get full Stay within calorie deficit Lose weight After I reached my weight goal I add a little bit of regular jasmine rice to it to make it real more like the whole thing is rice and add more meat like smoked ham to it and stay within maintenance calories Be full as hell Satisfied by how yummy it is It’s okay to eat real rice sometimes if you’re not doing the Keto thing Carbs aren’t bad for you but carb heavy foods are high calorie so you have to be very careful and count the calories ACCURATELY Also not ideal if you are higher risk for diabetes But by all means don’t deprive yourselves completely of foods you enjoy
