I've been doing your dry cook cauli rice ever since I ran onto it a few months ago. BUT I remove it from its bag to cook it in the microwave for the 6 min. Lots of the moisture is gone by the time I put it in the pan and add my seasonings back in. The bag holds the moisture in while in the microwave. Cooking it in a bowl out of the bag saves lots of time in the drying out process.

Our best recipe w/cauliflower rice was making Mahlouba (a Middle Eastern dish). We cooked the beef roast in spices in the crock pot and fried some eggplant. Ee put the cauli rice in the bottom of a baking pan, put the fried eggplant down and then the beef on top and then we poured the beef soup over the meat and rice around half way. You can add more spice at this time, cover with foil and put it in the oven until the cauli rice (or real rice) is done. Making it with cauliflower made it 20x better than rice. All of the flavors mesh together and we cant stop eating it

I just bust up the frozen till no chunks & throw it in the pan that I’ve melted some garlic parmesan basil butter in & sauté it till it’s all hot. After it’s done I add some chopped Italian parsley to it & serve. I find if I overcook it that’s when it starts tasting badly to me. We make the Spanish rice similar but I sauté some San Luis chorizo first with onions & pablano, then put the cauli rice in with sazon. I love you guys rice pudding recipe! I’ve made it a cpl times. I use a very fast hand grater that has a handle that turns. Makes Cauliflower rice in seconds. I put it straight into the pan, no water content, so already dry. I don't cook it for long, so it stays crunchy and when mixed with my dishes or spices, its just amazing.

EVERYONE PLEASE READ!!! After you microwave it squeeze it in a nut milk bag. It’s a SUPER fine mesh that lets you get all the water out. Seriously and you can dry cook it in seconds. Sometimes I skip that part completely and go straight to seasoning it. But the bottom line is getting rid of the excess moisture is key for taste and consistency.

Is a nut bag similar to cheese cloth? I've never heard of that.

I dry fry my cauliflower rice right from the bag, frozen. No need to microwave it. Moisture cooks away as you stir it then I’ll add some butter and spices or other stuff depending on the version I want. Super easy.
