As a Cajun myself, and gumbo maker, I must comment that this is one of the best gumbo explanations I have encountered. Good job! I do use a modification, instead of spending 1+ hours browning my roux on the stove, I use the microwave at half power, with frequent stirring, to make a nice, chocolate-colored roux in about 15 minutes. And it always turns out great! Plus, if you can get andouille from Jacob's in Laplace, it is the best.

@@ntfrst Plus with the microwave you don't have to heat up the house with an oven! I use 1 cup flour and 3/4 cup corn oil. Been doing it that way for years and never had a bad batch.

Microwave roux. First, I want to say this video is one of the best I have watched on the subject. I have been making gumbo for years and use the microwave for the roux. Remember, the gumbo doesn't care how you make the roux, only that it is good. Using the normal flour/oil ratio (I use corn oil) I stir it up in a microwave safe casserole dish, I cook it on 50% power and stir it about every minute to distribute the browning evenly. After about 12 to 15 minutes of this, the roux is a nice chocolate-brown color and in the finished gumbo tastes great.

I really don’t have anything to compare it to because I think when I was a kid I had it once in a diner in New Jersey. And it was from a can… don’t judge. I have been checking you out for years. First time I looked up to see if you made gumbo. I do my sausage the same way. I think it adds another layer of flavoring. I also bake my thighs, but I also bake my okra and it’s cooked and ready to go in at the end. Grew up in Pointe Coupee Parish 50 miles north of Baton Rouge and we put rice in our gumbo with a scoop of potato salad also. Enjoy watching your videos so much, you keep it real.❤️👏🤗

This is a great step by step process for gumbo. As a Cajun from outside of New Orleans, the only different things that I do is lose the thyme, and I precook my okra before adding it to the gumbo. There's a lot less slime that way.

We also brown up our andouille before adding the oil for the roux. We grill our chicken thighs seasoned with blackening seasoning on a charcoal grill and then shred the meat for the gumbo, so good! We just went to Lafayette over Spring Break and tried potato salad with our gumbo and I was shook! It was so good! 😂

I was born and raised in Lake Charles, Louisiana, just about 25 to 30 miles north of the Gulf of Mexico. I don't put okra in my gumbo but I do eat a little rice AND a scoop of potato salad in the gumbo. That's how we do it in Lake Chuck! 😊

I personally would have grilled my chicken with my sausage to get char flavor on both. Get some color on your chicken then bake it. But, otherwise, sheer perfection. The POPE! Not very many people know that! If you want a most awesome smoked sausage try some Conecuh sausage. It is made in Ala. and it is soooooo good! You can find it in most southern grocery stores from NOLA to Florida. I have moved back home to Texas and I can't get it here so I have to order it by the case. It is expensive that way but I find it is essential when I need sausage when I cook.

Or, in Texas you can get good smoked pork sausage at Market Basket in Winnie or several locations in the Beaumont and Port Arthur areas. They also ship for those not within driving distance. I've used their sausage for gumbo and red beans, and it is excellent.

There is a butcher shop in Erie, Pennsylvania, that makes their own andouille. I use it in my Tuscan bean soup. It is delish. I will have to try this gumbo. It looks really good.

My secret to making gumbo is to make it in the microwave. You would not believe that it makes a very very good sausage and chicken gumbo. All ingredients just as you mentioned minus the okra. Only difference is the cooking method is the microwave. Once everything is cooked I put it all together in a stockpot and simmer it all day. People who eat this gumbo can’t wait to get this recipe. Which was given to me by a true Cajun. I’ll take a picture of the recipe and email it to you. I promise it’s so delicious!!

Hi Nicole amazing looking gumbo I do something weird with my gumbo from time to time don't remember anybody else doing this, 15 are 20 minutes before it's done play Craig about 6 eggs and let them go to the bottom leave them alone for 5 minutes then you unstick them from the bottom of the pot and they float up cooked and they kind of take on the flavor of the gumbo I don't remember where I got that from I've been doing them like that so long keep putting out the great videos have a nice day

My family loves me to put some shrimp in there also! I make it then we carry it up to our lake house in that big tupperware. We do water sports all day and then heat it up and BAM... it's the best dinner you EVER had (because you're starving and sunburned and all you had to do was put it back on the stove). I'm an episode of America's test kitchen. I saw where they put the flour in the microwave until it got brown. It saved them a lot of time. I have never made gumbo.

FrugalFitMom does her roux in the oven. Her mom is from Louisiana and that's how she does it. Toss the whole pot in the oven and stir it every 15 minutes. But just leave it in there till it's the darkness you want.

I use frozen okra and it comes out perfect. I do sauté my okra before adding it to my gumbo though. It draws out the slime which is what helps to thicken the gumbo. It’s just how my family has always done it.

Great Gumbo the easy way Blue Runner YA-YA Gumbo Base just add your chicken and sausage serve over rice with. Jiffy Honey cornbread mix replace milk with half & half cook 22 minutes top with plenty of butter while hot out the oven. I've had really good Gumbo but none better than Blue Runner.

Gumbo is a short-term for an African word that means okra. My people in Louisiana put the okra in last so it won't be slimy. If you make gumbo without okra, you don't have gumbo.

When I make gumbo I add a couple of squirts of Louisiana Hot Sauce. Of course, you can use both, it is a matter of flavor.
