The story is that they're not supposed to be made with almonds. Traditionally these cookies contain an apricot kernel, which many Chinese people believe has certain health benefits. But they look a little like almonds, so people started using almonds instead. And some Chinese people are pissed off about it.

I think the almond cookies from Hong Kong are slighlty different. We put an actual almond in the middle of the cookie, instead of red food coloring (never actually seen cookies with that red dot)

Here you go Pt1 Butter There once was a cow 🐄. Her name from the farmers was Betsey, but she found that name very basic. "Betsey" was an extremely high maintenance cow. She would die of embaresment if called by that name by her peers. So she changed her name. From now on Betsey would only be referred to as Rachel. Rachel thought highly of her name because it was a human like name. While there was ab everlasting cow population that was named "Betsey" she had never once seen a cow named Rachel. At least not on her farm. So that's what she went by. Rachel was a pretty little thing. Purebred on a small small dairy farm in Monmouth, Maine, she had a beautiful brown cowhide with white spots perfectly shaped for her figure, and placed in exactly the right spot for her. Time passed by quickly and before she knew it, Rachel was grown up enough to be milked. Rachel, however, didn't feel ready at all. It was 48 days after her calving. Which was peak condition for cows to be milked apparently, but Rachel thought it was way to soon. She'd heard from her friends that it felt great and had seen it done a little to others so you would think it'd be normal for her. But she didn't necessarily trust the opinions of the friends who had been talking about mating and bulls since they met. She loved her friends to death, but when it came to this would she take their advice? Not a chance. It wasn't like she could run so when the time came Rachel obedently stood still. The man grabbed and squeezed at her utters until his desired amount of milk came out and Rachel tried not to cry. She had never felt so violated in her life. Except for the time when that little boy from the human school came to the farm in a jacket made from her mother. But that is a story for another day. Rachel wanted to kick the farmer, curse at him in a language he wouldn't even understand but would be too terrified to try. After what felt like an eternity he was done. Who knows what he would use it for, but what ever it be it was already out of her hands. The milk would then be salted, churned, shaped, cut, shipped and sold where it would then go and make a batch if delicious looking almond cookies seen by hundreds of thousands of people.

PT 2 Sugar The Mcane family was made up of about 260 pounds of sugar cane. About 26 bags of pure sugar. But all they knew was to grow. Until one day, a day that started out normal but would quickly become their worst and last. First came the warning. A snake slithered through the field of family reapeating a single phrase "Today is the day of death" but no one payed him any attention. They brushed off his warning and he slithered away. But what they didn't know was that he had seen this many times before. First there would be fire. It would slightly make the Mcanes uncomfortable but uneasy. This would make them take the snake's words into consideration. However it would be far too late. Next would come the amputation. They would be cut down legs left below the dirt. Set as a grave for each an every one of them until a new generation grows in it's place. They would then have their torsos and above be places on a truck and shipped out to be put in the building that would be the first and last building they would enter while living. The tourture chamber that produces the substance of all unnatural sweetness in the world, the sugar factory. They would then go through a somewhat relaxing process of being cleansed and washed before being skinned and stripped if the organs they happened to have on the outside. After the tourture the inactive organs would endure they would be bagged, shipped, and sold. A few bags would go to the Tasty Kitchen. Where one would take part in making internet famous almond cookies.

In fact, the original version of the recipe requires almond powder. Maybe they adapted the recipe so people with nut allergies can enjoy them too.

this red dot is found on a lot of chinese buns and cookies, it’s not supposed to taste like anything! for buns it’s sometimes used to note the filling inside, red for char siu/red bean paste, green for lotus paste, etc but most of the time it’s just a traditional decoration thing.

It is usually double the size at least, and it’s called 核桃酥, and it’s my childhood favorite! I was used to find all the coins in my house to buy one as my after school snack. When he said almond cookies I think of a totally different thing, the famous snack from Macao.

instead of red food dye our family puts the tiniest bit of maraschino cherry on top. Also in Asian stores you buy then with almond slivers on top.
