It did help!!! Thank you so much for your advice. I was so frustrated as it seemed so easy. I did temper the chocolate by melting it up to 45 C and adding the remaining finely chopped part of chocolate (approx,30 % of the whole amount). But my chocolate was not so nicely liquid when melted although it had this pretty shine (on the parts that came out of the mould the 1st time) so I suppose it was tempered correctly. I am happy now but still wondering what I did wrong. Thank you again for answering and helping out. Have a nice day!!

Awesome video. Thanks for posting. I was recently at the mall and found a hollow chocolate labeled as a "smash cake" it was a large cupcake with chocolate covered pretzels inside that you hit with a tiny mallet to open. I thought it was really cool and would be a great gift for a family that I am close with until I saw the price tag. $50! for a 4 inch hollow chocolate, so I thought to myself "I can probably make that for $5! To simplify it I thought I might do a 4" ornament because its simple and made for smashing, but then I saw this and immediately thought snowman. Each section can be filled with something different and I can include a tiny bat to hit it with. Glad you posted this.

Hi Elizabeth, there is no need for any type of "lubricant" to release the chocolate. If you don't use tempered chocolate, you must chill the mold and chocolate, what this does is contract the chocolate, and it will almost release itself automatically. IF you have problems with chilling in the fridge, 15 minutes in the freezer will do it. Bring the mold out, and tap, the chocolates will fall out. I have maybe a good dozen videos on my channel here where I show this happening. I hope this helps ! Thanks so much for watching ! 😊

I ordered these at a local chocolate supply store. I did it all online. Now, you can find moulds like this on Amazon too. If you live in a large city, a supply store that sells chocolate moulds will be easy to find.

Hi Nobody Slim, no, no spraying is needed. Do *NOT* spray anything on your mold. This will ruin the chocolate. If you didn't use tempered chocolate, simply place the chocolate mold into the fridge or freezer for 10 minutes and the chocolate spheres will just pop out very easily.

I have a question, what do you use to clean your brush? I made chocolate balls once with a silicon mold and brush but it’s so hard to get the chocolate off

Hi Ingrid, hot soapy water. Chocolate melts and falls off the brush in seconds. You can do it by hand or in the dishwasher. I like ti take my brushes, add soap to the end of the brush ( bristles area ) and then gently massage the soap in well, then rinse under the hot water coming from the tap.

Yes you can, since your pan is so big, you will have to make the chocolate very thick so it doesn't break when you try to remove it. Remember to put the pan in the freezer for 10 minutes so it removes from the pan easily. Hi Karen, no you don't. You can keep chocolate in-temper all day long as long as you occasionally give it heat to keep it in the correct temp range. Please note that when you do your first coat, you can pop the mould into the fridge or freezer for just 2 minutes and the chocolate will be hard ( in freezer ) and you can continue on to the next step. Hi there, I purchased mine online. You can find many great chocolate moulds on Amazon, and other good baking places online stores. A mould like this is about $40. You can find silicone models that are much less costly. ( this is a professional mould )

You can find them at all chocolate stores, online stores, Amazon etc. They are a very popular mold and come in many different sizes and materials from professional polycarbonate to silicone. ( I'm using a professional mold in this video ( polycarbonate ) )

Hi Lynn, If you are making these and want the best shine, take a soft cloth and wipe the inside of the mold with a soft cloth. This will ensure the chocolate have a really good shine. Also, your chocolate must be really well tempered. If you touch the chocolate balls with your hands this will happen ( the chocolate can dull ) What many chocolate shops will do, is spray a cocoa butter over the spheres that can give the spheres a texture, and hide any defects on the sphere itself. Funny thing, if I am NOT filming, and just under no pressure, I can make 6 perfect spheres ( 3 perfect complete spheres ) without a blemish on them. When filming, you're always trying to do your best, and of course things aren't always perfect. Hi Janine, it will work. I've done it. If you are not using tempered chocolate, make sure you freeze the "mold" for a good 10 minutes before you try to remove it, - it should just pop right out. Gently use your fingers to slide it out, or gently tap on your table to get the chocolate out. Can you put straight alcohol in the center? Or will it break down the chocolate?

Hi bre, yes you could do this, if you were using a smaller sphere. You can add something like Bailey's Irish cream, or something like that. It will be 100% OK. These spheres are very large. P.S. - You can use this trick - to add something like a nice Irish cream, you can create the sphere first, then use a little needle ( syringe ) to create a small hole and squeeze the Irish cream into the closed sphere. Once this is done, you can apply a tiny drop of chocolate where you made the hole and this stops the Irish cream from coming out if the sphere is rotated. Hello Nilassari 🙂 You want to store your chocolate in a cool place. Do NOT store chocolate in your refrigerator. If you do this, your chocolate can last like this for a very long time. I could for example make these chocolate spheres and put them into a little box and store them and a year later come back and they would still be perfect. I hope this helps ! Hello, I did not use any additional cocoa butter. I used high quality Belgian chocolate ( Callebaut brand ) I did not use chocolate chips in this recipe.

i was thinking of doing this with cheesecake but the thing is with my cheesecake recepite i put it in the oven for like an hour and then chill it texture will be quite smooth would it be wise to use a piping bag to put it in the balls or just find a cheesecake recepite that has different texture?

The mold you were using, what would that be called exactly if I were searching for it? My biggest problem seems to be using silicon molds and cracking them.

Hi Steve, Semi sphere chocolate mold. I did a fast search on Amazon and came up with dozens of them. In hard plastic ( polycarbonate ) and silicone. Take your time and you'll find what you need.
