@@JhunEnriquez-dx1mhToday, it's not common to use cream in carbonara in Italy although it once was popular. For classic, old-fashioned carbonara recipes containing cream google for versions by Luigi Carnacina, Ada Boni and Gualtiero Marchesi.

Oh man!! It was my mother's birthday yesterday and she loves that recipe! I do it a bit more simplistic but I'll definitely try this variation! It was already set that I would cook this dish... Due to family scheduling we could'nt make it happen this weekend but that's no problem! As I'm typing this, I've got 6 huge fillets of salmon chilling in brine and prepped for smoking on Monday. I do this every couple months, we get a few kilos of freshly smoked salmon and vacuum seal a whole lot. It keeps a while in the freezer but not that long... The kids love it too much!!! You got me stoked for next weekend!!!

I made a similar dish before with canned tuna. It was really good. It came from Pasta Grammar. Your show and Past Grammar are my favorite. You made this before with mascarpone. This would be a lower fat version and at least for me tastes just as good! Thanks for the great video.

I have a very personal connection with this dish. My Italian friend from school made it some day when we were having some beers. It was lacking the capers and was made with a different type of pasta (spaghetti) because it was a "struggle meal" with whatever was available as we got the munchies from drinking a bit too much. And it was still amazing. After that day I started to research Italian cuisine more and got into cooking as a passion myself. So you can say this dish was my entry drug hehe ;)

This is like an extension of a variant I do. Mine I just decorate pasta with smoked salmon that I just cut up, crush up sheep feta cheese and parsley and lemon. Feta goes very creamy when with pasta water I should try mixing the cheese into the pasta and not just on the top. I’m a big fan of the tangy flavours of feta and lemon with the smoked salmon

Vincenzo, I have to share with you and with everyone else what a difference that pasta water makes. Thank you so much. I have celiac's and I have to eat gluten free. The gluten free pastas in the US are not great. I started adding pasta water as you constantly tell us to do, and my goodness what a difference it makes. I was amazed how moist and delicious the pasta can become when we add back the water with the starch in it. It helps the pasta, it helps the grated cheese, it helps it all come together. I cannot thank you enough for the information you provide. It really makes a difference.

I lived in Italy for many years. I know this one. Also, foreigners / expats coming to Italy are often gobsmacked how popular Philadelphia cheese is in Italy. Specially if you consider its Murican origins. I also know the crisis or emergency variant of this dish (as made by Italians in a pinch). very easy, pasta and Salmon-Philadelphia cheese, it will fill you up as well and is acceptable in the right circumstances.

Do they sell trimming of the smoked salmon, (instead of slices)? It seem a shame to put residual heat on cold smoked salmon. At least not a good one, also there are some many different wood chip, strength an moisture. I think hot smoked salmon steak flaked I can see that, or fresh cooked.

I made something somewhat different, I used smoked trout instead of salmon, I started by making a roux with butter + corn starch, then some finely diced leek (cooking for 1-2 minutes), then slowly added milk, then a lot of parmigiano-reggiano, then the lemon juice + chopped mint and dill, then the trout, cooked for 1-2 minutes, added whole-grain pasta, toss, and finished with ground black pepper + drizzle of extra virgin olive oil.

My wife use smoked wild trout because smoked salmon is a bad product here in France (comes from Norway, feed with shit Red granules) if you buy high quality salmon it’s too expensive ! Kind of reminds me of a dish I make all the time. My creamy salmon pasta uses smoked salmon, cream cheese, spinach, red onion, garlic, bell peppers, tabasco and fresh rosemary. The tabasco works wonders with the smokiness of the salmon. I have to make your version too now though! I bet it's great!

@@vincenzosplate Of course! a) Mash or blend 1 can of San Marzano tomatoes, according to personal taste b) 1 small onion/shallot finely diced c) 2 (or more, depending on personal taste) garlic cloves finely chopped d) 1 tsp dried thyme + Chilli flakes (as you like) e) 150 gr. smoked salmon - Sauté the onion in olive oil - Add garlic - Add tomatoes and simmer for at least 30 minutes on low heat (acid should come out) - Add thyme - Fry the salmon in a little olive oil in a separate pan - Deglaze with cognac, if you like flambé. The alcohol dissolves the fat and flavor from the fish. - Salmon to the sauce short! with cooking - Fold in the pasta of your choice.

Roasted peppers or pimientos might work as well, and would add a nice pop of bright color similar to what the salmon gives. But olives sound delicious, and now I'm liable to include some when I try this!

I never was able to toss in a pan so I used a wok, melted the cream cheese with pasta water in the mix, added the pasta when everything is well mixed and gently flipped the pasta with the wok spatula. It did the job. I used fusilli that I had left over.

Salmon, capers, and lemon. That is an exquisite combination of flavors. From personal experience, use hot-smoked salmon (alder smoked is my favorite) and you won't believe how delicious this can be. YUM!

For all who complain about the ingredients. the difference is that he didn't call this dish in any way some Carbonara or something it's just a pasta dish he knows from his childhood. The things he is roasting are when people try to sell you known Italian dishes in a completely wrong way and he often said: what you do in your own kitchen is your choice but don't do some video about a Bolognese for example and use completely different ingredients.

Might be a stupid question but why use the lemon zest instead of the lemon juice?

He adds the juice right afterwards! You have to zest first, because you can't zest a lemon after you've already squeezed it. The zest carries the flavor oils in a more concentrated package, so it's important to include that if you want a stronger, brighter flavor.

Personally wouldn't use cold smoked salmon for this or at least not a quality one. Probably would use fresh or maybe some hot smoked salmon steaks flaked. A good smoked salmon need no further heat even residential head is a shame IMO, though they do sell trimming which would be ideal.

Warning, warning! Do not try to cheat on the smoked salmon! Vincenzo will reach through the internet and smack you in the head with a cast iron pan. (Well, he will at least be outraged.) I followed this recipe perfectly, used high-quality Montebello Penne Rigate, organic cream cheese, onion, fresh Italian parsley, lemon zest and capers (I love them, too) and -- train wreck approaching -- the cheat: canned salmon and smoked paprika. Ka-boom! Tomorrow I splurge and get some good smoked salmon so I can try again.

So far so good, BUT - "Smoked Salmon" - You have and use cold smoked Salmon - Warm smoked Salmon can be used also, but makes more Attetion and Skills... Both "Smoked Salmon" - Attetion now... You could have used a Lidel more pasta water, because that pasta at the End looked try and very sad - Yes, Philadelphia is a big THING in Italy (Eva and Harper)...

Dear Vincenzo, with all due respect, I see a departure from your emphasis on Italian authenticity. Cold smoked salmon, cream cheese, capers and onions are a NY/Jewish recipe combination, I don't think adding pasta and parsley makes it Italian. JMHO! I love your videos, regardless.

@@luke211286 One thing must never be forgotten. Here Vincenzo makes his own version, according to his taste, and this of course applies to any kind of dish. Here in Italy we could say that in every family they make a little bit of a different version.... who takes something away and who adds something. Vincenzo is just one of 60 million Italians. Here Vincenzo, for example, adds the salmon only at the end when the pasta is already in the pan. Many people here in Italy, on the other hand, brown the salmon a little bit in the pan along with the other ingredients, just as I do as well. I do not add the salmon only at the end !

I personally do not like it with smoked salmon. Prefer it with fresh. I love smoked salmon on its own. … but not heated… it tastes too fishy
